Tasting Notes

Tenuta dell’Ornellaia lies in the coastal hills of Bolgheri, in western Tuscany, where vineyards benefit from a Mediterranean climate moderated by sea breezes and protected by the sheltering hills behind the estate. The diverse soils—ranging from sandy and alluvial to clay and gravel—allow precise matching of Bordeaux varieties to specific parcels, enhancing complexity in the final blend. Grapes for Ornellaia are typically hand-harvested at optimal ripeness, parcel by parcel, with careful sorting both in the vineyard and at the winery. Vinification usually involves fermentation in stainless steel or temperature-controlled tanks with maceration tailored to each variety to extract color, aroma and fine-grained tannins without bitterness. The wine is then aged in French oak barriques (a significant portion new) for an extended period, followed by further refinement in bottle, ensuring integration of oak, structure and fruit before release—particularly important for the magnum format, which evolves more slowly and gracefully.

This 2019 Ornellaia Magnum is a natural partner for refined, richly flavored dishes: think bistecca alla fiorentina, roast lamb with rosemary and garlic, slow-braised beef short ribs, or game such as venison and wild boar. It also pairs beautifully with aged hard cheeses like Parmigiano Reggiano, Pecorino Toscano, or mature Comté, as well as truffle-based dishes and mushroom ragù over fresh pasta. For optimal enjoyment, serve at 16–18°C (60–64°F). Given its youth and structure, decanting is recommended—at least 1–2 hours for immediate drinking—to allow the aromatics to fully open and the tannins to soften. In a magnum, for special occasions or as the wine matures, a slightly longer decant can further highlight its depth and complexity.
