Tasting Notes
In the glass, this Chardonnay shows a bright, pale straw color with greenish reflections that signal freshness and youth. The nose is immediately expressive, layering citrus zest—think lemon and grapefruit peel—with delicate white flowers, subtle stone fruit and a chalky, almost saline mineral edge. On the palate, the wine is focused and linear yet textured, combining juicy notes of white peach, crisp apple and citrus with a fine, chalk-driven minerality that runs through the core. The cooler climate and high altitude bring tension and freshness, while a long, very clean finish leaves impressions of lemon curd, wet stone and a touch of almond. This vintage is drinking beautifully now but has the structure and acidity to evolve gracefully over the next 5–7 years, developing more nutty, honeyed and brioche nuances with time in bottle.

Production
Las Sequoias is an estate-owned vineyard in San Pablo, Uco Valley, planted around two remarkable sequoia trees that were set in the ground more than 70 years ago and remain unique in Mendoza’s landscape. At 1,600 meters above sea level, the site experiences cold nights, strong diurnal shifts and steady humidity, all of which slow ripening and preserve acidity. The soils are stony and well-drained, rich in calcium carbonate, giving a distinct chalky character to the fruit. Salentein farms this vineyard sustainably, focusing on careful canopy management and low yields to capture concentration without sacrificing finesse. Grapes are harvested by hand at optimal ripeness in the cool of the morning, then vinified with minimal intervention to allow the terroir to speak—gentle pressing, controlled fermentations (often with a mix of stainless steel and oak, depending on the vintage) and a judicious use of lees contact to build texture rather than heavy oak imprint.

This high-altitude Chardonnay is a natural partner for refined seafood and white meat dishes. Think oysters, scallops, grilled prawns, ceviche, or simply prepared white fish with lemon and herbs, as well as roast chicken, veal in light cream sauces, or pasta with spring vegetables and a touch of butter. Creamy cheeses such as Brie, Camembert or a mild goat cheese also work beautifully with its acidity and mineral backbone. Serve at 9–11°C to highlight its freshness and aromatic detail; if the wine is just opened and tightly wound, a short 20–30 minute stint in a carafe will help it open, but extended decanting is not necessary.
