The 2019 Raymond Dupont-Fahn Puligny-Montrachet 1er Cru ‘Les Folatières’ is a refined white Burgundy from one of the most coveted premiers crus in Puligny. This cuvée combines the precision and salinity of great Puligny with the generous, creamy texture that has made Dupont-Fahn a quietly sought-after name among Burgundy insiders. Produced in small quantities and increasingly hard to find, it offers a rare glimpse into a unique family history and a terroir that has proven its worth over decades.

Tasting Notes
In the glass, the wine shows a luminous, pale gold color with youthful green reflections that hint at both freshness and concentration. The nose is complex and inviting: mineral and saline notes mingle with aromas of ripe white peach, yellow plum and citrus zest, layered with toasted hazelnut, vanilla pod, and a subtle touch of spice. With air, more floral nuances—hawthorn, acacia, and a hint of chamomile—begin to emerge. On the palate, this is a concentrated, creamy Puligny with impressive tension. The attack is generous, featuring ripe stone fruit and a touch of orchard apple, followed by a fine, appetizing bitterness reminiscent of fruit kernels and toasted nuts that adds grip and structure. A pronounced mineral streak—chalk, wet stone, and a saline edge—runs through the mid-palate, keeping the wine precise and mouthwatering. The oak is beautifully integrated, offering a gentle frame of toast and vanilla without overshadowing the fruit. The finish is long, layered, and persistent, with lingering notes of ripe peach, citrus peel, and savory minerality. While already seductive in its youth, this 2019 has the structure and concentration to evolve gracefully for 8–12 years from vintage, gaining complexity, nuttiness and more tertiary nuances with time in bottle.

Production
Les Folatières is one of Puligny-Montrachet’s most esteemed premiers crus, known for its well-draining, limestone-rich soils and ideal slope exposure, giving wines that balance intensity with tension. Domaine Dupont-Fahn farms these vines without pesticides, favoring careful, sustainable vineyard work that allows the deep-rooted plants to express the original stony terroir. Harvesting is typically done by hand to ensure meticulous selection of perfectly ripe Chardonnay grapes, preserving both acidity and aromatic purity. In the cellar, the juice is gently pressed and fermented in oak barrels, with a judicious use of new wood to bring texture and complexity without masking the mineral core. Extended aging on fine lees adds creaminess and depth, resulting in a wine that seamlessly marries ripe fruit, subtle oak and the distinctive salinity of Puligny-Montrachet.

Food & Serving
This Puligny-Montrachet 1er Cru ‘Les Folatières’ is an excellent partner for refined seafood dishes such as turbot with beurre blanc, poached lobster, scallops in a light cream or citrus butter sauce, or grilled langoustines. It also shines with roasted or pouched poultry, veal in a delicate cream sauce, and rich dishes featuring morels, chanterelles or truffle. For cheese, think along the lines of Comté, aged Gruyère or a mild, creamy Brie. Serve at 10–12°C (50–54°F) to showcase both its tension and texture. Young bottles will benefit from 30–45 minutes in a decanter or a large-bowled glass to allow the aromatics to fully unfold, while more mature bottles should be handled gently and decanted only briefly, if at all.

Producer
Domaine Dupont-Fahn, based in Tailly near Meursault in Burgundy, was founded in 1975 and is now in the hands of third-generation vigneron Raymond Dupont-Fahn. The estate’s history is quite singular in Burgundy: early on, the family’s rocky parcels stretching over Les Perrières de Meursault and Sous le Dos d’Ânes were deemed too stony and thin, leading to official permission from the INAO to add a layer of topsoil—an unusual decision that later prompted a downgrade to Bourgogne Blanc status after complaints from neighboring growers. Decades later, the vines are deeply anchored into their original, stony subsoil, delivering wines of striking quality and character that have attracted a growing following among Burgundy enthusiasts, making them increasingly difficult to find. Farmed without pesticides and with a strong focus on expressing terroir, Dupont-Fahn has earned a reputation as a meticulous, quality-driven producer whose whites combine richness, individuality and a clear sense of place.
