Tasting Notes
In the glass, the 2019 Pio Cesare Barbaresco shows a luminous, medium garnet color with brick-tinged edges typical of Nebbiolo, even at a relatively young age. The nose is intensely aromatic and layered: rose petals, violet, and dried flowers mingle with red cherry, wild strawberry and raspberry, followed by notes of sweet spice, licorice, tobacco leaf, and a subtle hint of tar and underbrush. On the palate, this Barbaresco is medium-bodied yet firm and focused, with a core of bright red fruit—sour cherry, red currant and pomegranate—wrapped in fine, chalky tannins. Fresh acidity gives the wine lift and tension, while savory nuances of leather, dried herbs, anise and a touch of cedar add complexity as it opens in the glass. The finish is long and precise, with lingering floral and mineral notes. 2019 is a structured, age-worthy vintage in Barbaresco; this wine is approachable with aeration now but will benefit from additional bottle age. Expect an optimal drinking window of roughly 2025–2035, with potential to evolve even longer under proper cellaring.

Production
The 2019 Pio Cesare Barbaresco is sourced from estate-owned and long-term contracted vineyards within the Barbaresco DOCG, planted primarily on calcareous marl and clay-limestone soils that give Nebbiolo its signature perfume and finely etched tannins. The rolling hills and cooler exposures of Barbaresco provide a slightly softer, more aromatic profile than neighboring Barolo, while still ensuring excellent ripeness and natural acidity. Grapes are typically hand-harvested parcel by parcel to ensure optimal maturity and rigorous selection. In the cellar, Pio Cesare follows a predominantly traditional vinification: extended maceration on the skins to extract aromatics and structure, followed by fermentation in temperature-controlled stainless steel. The wine is then matured in a combination of large, neutral Slavonian oak botti and a smaller proportion of French oak barriques to refine tannins and add subtle spice without overwhelming the purity of fruit or terroir expression.

Food & Serving
This Barbaresco is a natural partner for classic Piedmontese cuisine and refined, savory dishes. It pairs beautifully with truffle risotto, tajarin pasta with butter and sage, mushroom-based dishes, roasted or braised veal, lamb, game birds, and aged cheeses such as Parmigiano Reggiano or matured Taleggio. Its vibrant acidity and fine tannins also complement richer preparations like ossobuco, beef short ribs, or porcini risotto. Serve at 16–18°C (60–64°F) in large Burgundy or Nebbiolo stems to allow the aromas to fully unfold. For current drinking, decant 1–2 hours before serving to soften the structure and bring out the wine’s floral and spicy nuances; older bottles (from 8–10+ years of age) may need a gentler, shorter decant primarily to separate any sediment.
