Tasting Notes
In the glass, the 2019 Cobos shows a dense, opaque ruby-purple hue, hinting at its concentration and depth. The nose is intense and layered, with aromas of ripe blackberries, plum compote and black cherry framed by notes of violets, graphite, cocoa, sweet tobacco and subtle vanilla from refined oak aging.
On the palate, the wine is full-bodied and richly textured, yet impeccably balanced. Plush dark fruit—black plum, cassis and blackberry—unfolds alongside hints of licorice, dark chocolate, espresso and a touch of baking spice. Production
The 2019 Cobos is sourced from select parcels in Mendoza’s most prized subregions, Luján de Cuyo and the Uco Valley, where elevations, abundant sunshine and cool nights create ideal conditions for top-tier Malbec. Well-drained, alluvial and rocky soils naturally limit vigor, concentrating flavor and structure in the grapes. Vineyard work is meticulous, with careful canopy management and low yields to enhance intensity and terroir expression. Grapes are harvested by hand at optimal ripeness, sorted with great precision, and gently vinified with minimal intervention to preserve purity. Fermentation takes place in small batches, often with temperature control to capture aromatic finesse, followed by aging in carefully selected French oak barrels that add complexity and texture without overwhelming the fruit.
Food & Serving
This powerful yet refined Malbec pairs beautifully with rich, savory dishes such as grilled ribeye, roast lamb, short ribs, venison, or slow-braised beef. It also works well with aged hard cheeses, mushroom-based dishes and hearty stews featuring herbs and dark sauces. Serve at 16–18°C (60–65°F) to show its full aromatic range; if opened in its youth, decant for 1–2 hours to soften the tannins and allow the wine’s layered bouquet to emerge.
