Tasting Notes

Underneath the florals and fruit, subtle layers of leather, sweet spice, licorice, and earthy mineral tones steadily emerge as the wine opens.

Production
Sourced from hillside vineyards in the Barolo zone, the fruit for Paolo Manzone’s Barolo Riserva benefits from classic Langhe conditions: calcareous-clay soils rich in marl, good elevation, and excellent exposure to the sun, all of which contribute to Nebbiolo’s aromatic intensity and firm, age-worthy structure. Harvest is typically carried out by hand to ensure only perfectly ripe, healthy grapes make it into the cellar. In keeping with Barolo’s traditional approach, fermentation takes place with extended maceration on the skins to extract color, tannin and aroma, followed by a long maturation in large oak casks (and possibly a combination with smaller barrels), where the wine slowly refines its texture and gains complexity before being elevated to Riserva status and released after prolonged aging.

Think braised meats such as ossobuco, braised beef short ribs, slow-cooked lamb shanks, or classic Piemontese dishes like brasato al Barolo.
