2019 Muchada-Léclapart Elixir is one of the most compelling new cult white wines emerging from southern Spain, crafted by the visionary duo Alejandro Muchada and Champagne grower-producer David Léclapart. This dry blend of Palomino and Moscatel reimagines the historic albariza soils of Sanlúcar and coastal Chipiona through a minimal-intervention, biodynamic lens. Produced in tiny quantities and praised by the international wine press, Elixir is a precise, characterful white that bridges Andalusian tradition and cutting-edge artisan winemaking.
Tasting Notes
In the glass, Elixir shows a pale, luminous straw color with a slight natural haze, a visual cue to its unfiltered, low-intervention upbringing. The nose is strikingly perfumed yet refined, with lifted notes of orange blossom, white flowers and fresh citrus peel, layered over hints of white pepper, chamomile and a distinct maritime salinity.
On the palate, the wine is dry, serious and beautifully balanced, with a taut, focused core of citrus, stone fruit and delicate herbal notes. The Palomino contributes structure, chalky intensity and a salty, almost silt-like minerality, while the Moscatel brings aromatic lift, floral nuance and a gentle exotic edge. The texture is fine and precise, leading into a long, linear finish marked by a clean bitterness reminiscent of grapefruit pith and savory tonic. Elixir gains complexity and detail with air and over time, both in the glass and across several days once opened, and it has the concentration and structure to evolve gracefully for several years in bottle.
Production
Elixir is sourced from two carefully chosen terroirs in Cádiz. The Palomino (about 60%) comes from old vines in Viña La Platera in the famed Pago Miraflores in Sanlúcar de Barrameda, rooted in classic albariza – the brilliant white, chalk-rich soil that defines the best wines of the region. The Moscatel (about 40%) comes from Viña Camino del Puerto in Pago Abulagar in the coastal village of Chipiona, where sandy soils with some clay add fragrance and textural nuance. All vineyards are farmed biodynamically, with extremely low yields of only 1,500–2,500 liters per hectare – remarkably low for this area. The grapes are harvested by hand and fermented spontaneously with indigenous yeasts in used Bordeaux barriques, without fortification, flor aging or corrective interventions. The wine is aged in these old Bordelese barrels, sees only minimal additions of sulfur, and is bottled unfiltered and without cold stabilization to preserve its full character and energy.
Food & Serving
Elixir’s dry, saline profile and floral aromatics make it a superb match for refined seafood and Mediterranean cuisine. Pair it with raw or lightly cured fish (ceviche, tartare), oysters and shellfish, grilled prawns, or simply prepared white fish with olive oil and herbs. It also shines alongside delicately spiced dishes, vegetable tapas, Iberian cheeses, and dishes featuring fennel, citrus, or almonds. Serve at 9–11°C (48–52°F) for maximum precision and aromatic lift. A brief decant of 15–30 minutes helps the wine unfurl, and it will continue to evolve positively over several hours; remarkably, the producer notes that the wine becomes even more complex over a couple of days once opened. For newly shipped bottles, allowing them to rest for about two weeks before opening is recommended.

Muchada-Léclapart is a small, avant-garde project based in Sanlúcar de Barrameda, born from the partnership between Cádiz native Alejandro Muchada and renowned Champagne grower David Léclapart. Alejandro, who originally had little connection to wine, discovered biodynamics and the craft of vigneron work while assisting at Léclapart’s estate in Champagne – an experience that profoundly shaped his approach. Together, they returned this philosophy to the historic albariza vineyards of Cádiz, focusing on still wines from Palomino and Moscatel made without fortification and without flor, in stark contrast to traditional Sherry production. Farming just 3 hectares biodynamically and working with extremely low yields, Muchada-Léclapart has quickly earned cult status and significant critical attention for redefining what the Atlantic-influenced whites of Sanlúcar and its surroundings can be: pure, expressive, terroir-driven wines of remarkable finesse and originality.
