Le Crocine Cuvée Eva comes from vineyards in Bolgheri, where vines benefit from a mild Mediterranean climate, cooling sea breezes and well-draining, mixed soils of sand, clay and stones that favor slow, even ripening. The grapes are typically harvested by hand at optimal maturity to preserve both freshness and varietal character. After careful selection in the winery, the must undergoes temperature-controlled fermentation in stainless steel or small vats, with gentle extraction to achieve color and tannin without harshness. The wine is then aged in oak (often a mix of new and used barrels) for a period sufficient to integrate tannins and build aromatic complexity, before bottling and further refinement in bottle prior to release.
