In the glass, the 2019 Baudinet GSM shows an intense garnet‑red core with a vibrant purple rim, hinting at both concentration and youthful energy. The nose is complex and inviting, opening with ripe blackberry and dark plum, followed by wild herbs and dried lavender. Subtle notes of leather, cracked pepper, and a touch of smoked meat and tar add savoury depth, while hints of baking spice and fine French oak sit elegantly in the background. The region’s warm days and cool nights allow Grenache, Shiraz and Mataro to ripen fully while retaining vibrant acidity and aromatic lift. Grapes are harvested at optimal ripeness, parcel by parcel, then fermented separately to preserve the character of each variety. Gentle extraction is used to capture colour and fine tannin without heaviness, and the final blend—50% Grenache, 30% Shiraz, 20% Mataro—is matured for 14 months in French oak, adding polish, texture and subtle spice without overwhelming the fruit.
