Tasting Notes
In the glass, the 2019 Les Clos shows a luminous pale gold colour with green reflections, hinting at both youth and freshness. The nose is finely layered and expressive: citrus oils (lemon zest, grapefruit), green apple and pear sit alongside white flowers, chalk dust, oyster shell and a touch of hazelnut and brioche that suggests the influence of lees aging. With air, subtler notes of flint, honeycomb and delicate spice emerge.
On the palate, this Grand Cru is focused and pure, with a vibrant line of acidity carrying flavours of citrus, crunchy stone fruits and a distinctly saline, iodine-laced minerality. The mid-palate is concentrated yet never heavy, with a fine-boned structure, subtle creaminess from maturation, and beautifully integrated oak that frames rather than dominates. The finish is long, mouthwatering and precise, leaving lingering notes of chalk, citrus peel and faint almond. While already seductive in its youth, this 2019 has the structure to age gracefully for 10–15 years or more in a good cellar, gaining additional complexity, honeyed nuances and tertiary depth over time.
Production
Les Clos is the largest and most historically celebrated of Chablis’ Grand Cru vineyards, a south to southwest-facing slope overlooking the town of Chablis, rooted in classic Kimmeridgian limestone with fossil-rich marl. These poor, stony soils and the cool continental climate give the wine its hallmark tension, salinity and minerality. Joseph Drouhin farms its Vaudon estate parcels with great care, following sustainable and often organic or biodynamic principles, and harvesting is typically done by hand to ensure optimal selection of bunches. In the cellar, the grapes are gently pressed and the juice is fermented in a combination of stainless steel and oak, with careful temperature control to preserve aromatics. Aging on fine lees adds texture and complexity, and oak use is restrained, allowing the terroir of Les Clos to take centre stage rather than being overshadowed by wood.
Food & Serving
This Grand Cru Chablis is a superb partner for refined seafood dishes such as oysters, scallops, lobster, langoustines and turbot, as well as sushi and sashimi where its salinity and precision shine. It also pairs beautifully with poultry in cream or morels, fine veal dishes, and aged goat’s cheese or mild, nutty cow’s milk cheeses. Serve at 10–12°C (50–54°F) to highlight its freshness and complexity. For optimal expression, especially in its youth, decanting for 30–45 minutes in a medium-sized white wine carafe is recommended to allow the wine to open and reveal its full aromatic range.
