Grapes are typically harvested by hand in the cool of the morning to preserve freshness and are carefully sorted before fermentation. Vinification generally involves a temperature-controlled fermentation in stainless steel or traditional tanks, followed by extended maceration to refine tannins and extract color and flavor.
