Fermentation takes place in temperature-controlled stainless steel tanks with extended maceration on the skins to extract color, aroma, and tannin. The wine is then traditionally aged for several years in large French oak casks (botti), a hallmark of Il Poggione’s style, before additional bottle rest—here, in the rare and painstakingly prepared 12‑liter Balthazar—ensures harmony and longevity.
