Tasting Notes
In the glass, the wine shows a bright, luminous lemon-gold hue with subtle green reflections, signaling both youth and freshness. The nose is deeply expressive and layered, opening with citrus oils, mandarin peel and Meyer lemon, followed by acacia blossom, linden, white flowers and hints of spring herbs. As it unfolds, notes of honey, almond cream, toasted brioche and a delicate touch of new oak emerge, all wrapped in a chalky, mineral frame.
On the palate, this Le Montrachet is at once powerful and precise: the first impression is one of great freshness and perfect balance, with a silky, almost weightless attack that quickly builds into a rich, mouth-filling core. Citrus and stone fruits mingle with nuances of honey, mandarin, delicate spice and a fine, saline minerality. The oak—100% new—is beautifully integrated, adding structure, depth and texture without overwhelming the fruit. The finish is exceptionally long, intense and complex, lingering on notes of citrus zest, floral honey and wet stone. While already impressive in its youth, this Grand Cru has the structure and concentration to evolve brilliantly for 15–25 years or more in a proper cellar.
Production
Sourced from the legendary Le Montrachet Grand Cru on the border of Puligny- and Chassagne-Montrachet, this wine is born from classic Burgundian terroir: clay and limestone soils that provide both richness and tension, and a slope and exposure that ensure perfect ripening of Chardonnay. The vines draw deeply from these mineral-rich soils, giving the wine its hallmark intensity and salinity. Harvesting is done by hand to ensure only perfectly ripe, pristine fruit makes it to the winery. True to Henri Boillot’s philosophy of minimal intervention, the must is gently pressed and allowed to ferment with a focus on preserving purity and terroir expression. The wine is then aged entirely in 100% new French oak barrels, carefully selected and monitored to support, rather than dominate, the wine’s natural character, resulting in a Grand Cru of great precision, depth and finesse.
Food & Serving
This is a majestic gastronomic white that shines with refined, richly flavored dishes: think butter-poached lobster, scallops in a delicate beurre blanc, turbot or sole with creamy morel sauce, and roasted free-range chicken with truffle or morels. It also pairs beautifully with fine cheeses such as aged Comté, Beaufort or a well-ripened brie. For optimal enjoyment, serve at 10–12°C (50–54°F); too cold and the complexity will be muted, too warm and the freshness may soften. Young bottles will benefit from 45–60 minutes in a decanter to open up the bouquet and harmonize the oak; mature bottles should be handled more gently, with a shorter decant or careful slow-oxygenation in the bottle before serving.

Domaine Henri Boillot traces its roots back to the late 19th century, when Henri Boillot Sr. began acquiring vineyards in some of Burgundy’s most prestigious appellations. Over generations—through Henri Boillot Jr. and Henri Boillot III—the family has expanded its holdings to around 19 hectares, refining a style that has made the domaine one of the most respected names in modern Burgundy. Today, Henri Boillot is especially renowned for his white wines from Chardonnay, particularly his Premier and Grand Cru bottlings from Puligny-Montrachet, Bâtard-Montrachet, Le Montrachet and Meursault. The estate is known for its commitment to sustainable, largely organic vineyard practices and a minimal-intervention approach in the cellar, often using natural yeasts and a carefully judged use of new oak so that each wine transparently reflects its terroir. Boillot’s Le Montrachet sits at the pinnacle of his portfolio and is widely regarded as one of the reference points for this legendary Grand Cru.
