Tasting Notes
In the glass, the 2019 Les Perrières presents a luminous pale gold color with subtle green highlights, hinting at its freshness and youth. The nose is refined and complex: notes of lemon zest, white flowers, and green apple intertwine with hints of crushed stones, chalk, and a discreet touch of toasted hazelnut and fine oak. On the palate, the wine is precise and vertical, with a vivid line of acidity that carries flavors of citrus, white peach, and pear, layered over a saline, flinty minerality. The mid-palate is simultaneously tense and silky, building into a long, mouthwatering finish marked by citrus oil, wet stone, and a gentle creaminess from well-judged élevage. Still youthful, it shows excellent structure and balance, indicating significant aging potential. In magnum, you can easily expect 10–15 years of graceful evolution from vintage, with the wine gaining additional complexity, nuttiness, and depth while retaining its core of minerality.

Production
Les Perrières is a Premier Cru vineyard in Puligny-Montrachet renowned for its thin, stony, limestone-rich soils and excellent drainage, which naturally limit yields and enhance concentration. Vines typically grow on gentle slopes with an ideal exposition, allowing for slow, even ripening and a superb expression of terroir. François Carillon practices careful, sustainable viticulture, often harvesting by hand to ensure that only perfectly healthy, ripe Chardonnay grapes make it to the cellar. In the winery, the fruit is gently pressed to preserve purity and finesse, with the juice then fermented in French oak barrels—often with a judicious proportion of new oak—to add texture without masking the vineyard character. The wine is aged on fine lees, typically for around a year or more, with minimal bâtonnage to maintain tension and precision. Bottling is done with a focus on preserving freshness, clarity, and the mineral backbone that is the hallmark of Les Perrières, with magnum bottling further protecting the wine as it matures.

Food & Serving
This Puligny-Montrachet 1er Cru pairs beautifully with refined, delicately flavored dishes that echo its elegance and minerality. Think poached or grilled turbot, sole meunière, seared scallops, lobster with beurre blanc, or finely prepared poultry such as roast chicken with morel cream sauce. It also excels with high-quality shellfish, sushi and sashimi, and subtly truffled dishes, as well as aged, firm cheeses like Comté or Beaufort. Serve at around 11–13°C (52–55°F) to allow the aromatics and texture to fully unfold without sacrificing freshness. For current drinking, especially from magnum, a gentle decant of 30–45 minutes can help the wine open up, softening the edges and revealing more layers of fruit and spice. If cellared for several years, decanting becomes less essential but still beneficial, particularly when serving at special gatherings.
