Bottled in an impressive magnum format, the 2019 François Carillon Puligny-Montrachet 1er Cru Champ-Gain captures the crystalline precision and depth that have made Puligny one of the world’s benchmark sites for Chardonnay. This premier cru, perched high on the slopes above the village, is known for producing wines of lifted minerality, tension and fine-boned elegance, all of which shine through in this vintage. In the hands of François Carillon—scion of a Puligny family with nearly five centuries of viticultural history—Champ-Gain becomes a particularly refined and ageworthy expression of Côte de Beaune terroir.

Tasting Notes
In the glass, this wine typically shows a luminous, pale gold color with green-tinged highlights, reflecting both its youth and its cool, high-slope origin. Swirl it and you can expect a finely etched bouquet: white flowers, lemon zest and crunchy orchard fruits layered with chalk dust, wet stone, and subtle notes of almond, freshly churned butter and discreet oak spice. On the palate, the 2019 Champ-Gain is precise and focused, combining the richness of a warm vintage with the taut backbone that defines classic Puligny-Montrachet. Expect a vibrant core of citrus (Meyer lemon, grapefruit), pear and crisp apple, wrapped in a silky, almost weightless texture. Saline minerality and a gentle smokiness carry through the long, linear finish, with well-integrated acidity keeping everything fresh and mouthwatering. In magnum, this wine has excellent aging potential: while already approachable for its purity and balance, it should gain complexity—moving toward hazelnut, brioche and honeyed nuances—over 10–15 years or more if well cellared.

Production
Champ-Gain is a higher-altitude premier cru site on the slopes above Puligny-Montrachet, where thin, stony soils over limestone and good air circulation give naturally low yields and grapes of notable tension and aromatic lift. At Domaine François Carillon, vineyard work is meticulous and largely manual, with careful canopy management and strict green harvesting where needed to ensure optimal ripeness and concentration. Grapes are harvested by hand in small crates to preserve berry integrity, then gently pressed and fermented—predominantly in French oak barrels, with a judicious use of new wood—to add texture and complexity without overwhelming the terroir expression. The wine is typically aged on fine lees for many months, with minimal bâtonnage, before careful racking and bottling, allowing it to gain depth and harmony while retaining its trademark precision.

Food & Serving
This Puligny-Montrachet 1er Cru is a natural partner for refined cuisine: think butter-poached lobster, scallops with a light citrus or beurre blanc sauce, turbot or sole, and delicately sauced white fish. It also pairs beautifully with roast chicken, veal in cream-based sauces, or earthy dishes featuring morels and other wild mushrooms, as well as aged Comté or mild, nutty Alpine cheeses. Serve at 10–12°C (50–54°F) to allow the aromatics to unfold without losing definition. For current drinking, decanting for 30–45 minutes can help the wine open and show its full range of aromas; older bottles from this magnum format should be handled gently and decanted briefly, mainly to remove any sediment.

Producer
Domaine François Carillon, formally established in 2010, is the continuation of a Puligny-Montrachet lineage that dates back to at least 1520, when written records first mention Jean Carillon tending vines in the village. Despite setbacks like the phylloxera crisis, the family repeatedly returned to Puligny out of deep attachment to the land, replanting and refocusing on quality after the First World War. In the 1960s, Louis Carillon decisively turned the estate toward almost exclusively Chardonnay, helping cement the family’s reputation in one of Burgundy’s most prized white wine terroirs. After working alongside his father and brother from 1988, François created his own domaine in 2010, quickly becoming a leading reference in Puligny for purity, finesse and terroir transparency. Today, farming around 16 hectares across Puligny-Montrachet, Chassagne-Montrachet and Saint-Aubin, and producing a wide range of mostly Chardonnay cuvées, François Carillon’s wines are highly allocated and frequently found on the lists of top restaurants worldwide.
