Tasting Notes
In the glass, the 2019 shows a deep, saturated ruby-purple hue that hints at both concentration and youth. The nose is intensely expressive yet refined, with layered aromas of blackcurrant (cassis), blackberry and blue fruits intertwined with cedar wood, graphite, tobacco leaf and subtle dried herbs. Nuances of violets, cocoa nib, warm stones and fine spice from French oak add complexity without overshadowing the fruit. On the palate, this is a full-bodied, powerful Cabernet, but one that remains impeccably balanced and poised. The core of cassis, black cherry and plum is framed by firm, ultra-fine tannins and a vibrant line of acidity that keeps the wine energetic rather than heavy. Notes of cedar, cigar box, pencil shavings and a whisper of tobacco evolve with air, leading into a long, precise and savory finish. Already incredibly compelling, this vintage has the structure and depth to age beautifully for 15–25 years or more under proper cellaring conditions.

Production
The Eisele Vineyard lies in the northeastern corner of Napa Valley, just east of Calistoga at the foot of the Palisades mountains, on alluvial soils that combine gravel, cobbles and well-drained loam. This unique terroir has been under vine since the 1880s and has been farmed organically since 1998 and biodynamically since 2000. The Cabernet Sauvignon grapes for the 2019 Estate are harvested entirely by hand, with strict selection in the vineyard and at the winery. After gentle crushing and fermentation, the wine is aged for around 18 months in French oak barrels, a significant portion of which are new, to refine structure and add complexity while preserving the vineyard’s distinctive character and purity of fruit.

Food & Serving
This is a superb partner for richly flavored dishes such as grilled or roast beef, lamb chops, braised short ribs, game, or slow-cooked stews. It also pairs beautifully with mature, firm cheeses like aged Comté, cheddar or Gouda. For optimal enjoyment, serve at 16–18°C (60–64°F). Decanting for 1–2 hours in its youth will help the wine open and express its full aromatic range; older bottles may need a shorter, more gentle decant to separate sediment while preserving delicate tertiary notes.
