Crafted exclusively from Chardonnay, this Grand Cru captures the essence of Chevalier-Montrachet’s lofty terroir—precise, vertical, and intensely mineral. In a ripe yet classically structured vintage like 2019, it offers both immediate seduction and the promise of long-term evolution. Sourced from one of the most revered white wine vineyards on earth, this bottling stands out for its combination of concentrated fruit, chiselled acidity and refined oak integration. Michel Niellon has been an essential name in Chassagne-Montrachet since the mid-20th century, and his limited-production Chevalier-Montrachet has earned a reputation as one of the most pure, focused and ageworthy expressions of the Grand Cru.

Tasting Notes
In the glass, the 2019 Chevalier-Montrachet Grand Cru shows a luminous pale gold core with light green highlights, hinting at both richness and freshness. The nose opens with layered aromas of white peach, ripe pear and Meyer lemon, intertwined with notes of acacia blossom, crushed stones, and a subtle saline edge. With air, more complex nuances of toasted hazelnut, warm brioche, and delicate vanilla from fine French oak emerge, all carried by a distinct chalky minerality. On the palate, this is precise and powerful yet never heavy—classic Chevalier. A vibrant line of acidity cuts through the generous fruit, delivering flavors of citrus oil, yellow plum, and orchard fruit, supported by hints of flint, almond cream, and lightly smoky oak. The texture is both silky and tensile, with a long, laser-focused finish that lingers on citrus zest, stone, and a faint savory note. While already striking in its youth, the structure, concentration and balance suggest excellent aging potential of 10–20 years or more in a proper cellar, during which the wine will gain further complexity, creaminess, and tertiary notes of honey, nuts, and truffle.

Production
Chevalier-Montrachet is one of Burgundy’s highest and most celebrated Grand Cru vineyards, with thin, chalky limestone soils over marl and an exposed, windswept slope that naturally limits yields and concentrates flavor. Domaine Michel Niellon works these prized parcels with great care, typically favoring low yields and meticulous, mostly manual vineyard work to ensure optimal ripeness and purity of fruit. Grapes are harvested by hand at precise maturity, then gently pressed and fermented in French oak barrels, with a judicious proportion of new oak to support—but never dominate—the wine’s mineral profile. The wine undergoes traditional barrel élevage on the lees, with careful topping and minimal bâtonnage, preserving both tension and texture before bottling with minimal intervention to retain terroir expression.

Food & Serving
This Grand Cru Chardonnay shines with refined, richly flavored dishes that match its depth and precision. Think butter-poached lobster, scallops in a light beurre blanc, turbot or sole with creamy sauces, roasted chicken with morels, or veal in a delicate cream and mushroom jus. It also pairs beautifully with high-quality aged Comté, mild creamy cheeses, or simple dishes featuring seasonal white truffle. Serve at around 11–13°C (52–55°F) to allow the aromatics and texture to fully unfurl. For current drinking, decanting 30–45 minutes before serving will help the wine open up, especially in its youthful phase; older bottles should be handled gently and decanted only briefly to remove sediment.
