In the cellar, the grapes are gently pressed and the must is settled before fermentation in oak barrels, often with a high proportion of used wood to emphasize terroir rather than toast. The wine typically undergoes élevage on fine lees, with occasional bâtonnage depending on the vintage’s natural richness, resulting in a balanced, textural white Burgundy that marries fruit purity, minerality, and subtle oak influence.
