On the palate, it is medium to full-bodied with a satin-like texture – concentrated yet never heavy. Juicy stone fruits and ripe orchard fruits are lifted by vibrant citrus and a subtle, savory nuance. The mid-palate is fleshy, with a gentle sense of creaminess, perfectly counterbalanced by a firm, chalky grip and mouthwatering acidity. The finish is long, pure and mineral-driven, suggesting strong aging potential. Well-stored bottles should evolve beautifully over 10–15 years, gaining extra complexity of hazelnut, honey and brioche while retaining their limestone spine.

Les Caillerets is one of Chassagne-Montrachet’s most prized premier cru sites, known for its very chalky, limestone-rich soils that naturally yield wines of finesse, tension and longevity. Domaine Fontaine-Gagnard farms their vines with meticulous care, working the soils by ploughing, carrying out regular soil analyses, replacing dead vines annually and following an integrated, sustainable approach to vineyard management. Harvest is done by hand to ensure optimal selection of healthy, perfectly ripe Chardonnay grapes. In the cellar, the domaine follows classic Burgundian methods: fermentation with indigenous yeasts, followed by 12 to 18 months of élevage in French oak barrels. For this premier cru, 30–40% new oak is used, lending subtle structure and complexity without overshadowing the purity of fruit and the distinct Caillerets minerality.

This refined Chassagne-Montrachet 1er Cru is an outstanding partner for sophisticated dishes: think butter-poached lobster, scallops with beurre blanc, turbot or sole in a delicate cream sauce, roast chicken with morels, or rich seafood pastas.
