Tasting Notes
In the glass, the 2019 Clos de la Roche shows a deep, vibrant ruby color with a youthful sheen at the rim, hinting at both concentration and freshness. The nose is layered and complex, opening with ripe plum and black cherry, followed by notes of orange zest, vanilla pod, and subtle sweet spice. With air, more savory nuances emerge: forest floor, mulchy earth, dried rose petals, and a fine mineral dusting that speaks clearly of its Morey-Saint-Denis origins. On the palate, the wine is full-bodied and fleshy yet impeccably balanced by bright, lifted acidity. The attack is generous with dark berry fruit, plum, and blood orange, broadening into a core of ripe red cherry, baking spice, and a touch of cocoa. Powdery, refined tannins frame the fruit, giving a tactile, almost velvety grip without heaviness. The finish is long, resonant, and distinctly mineral, with lingering notes of earth, stone, and spice that promise further complexity with time. This 2019 has excellent aging potential: it can be enjoyed now with a proper decant, but will gain in nuance and harmony over 10–20 years, and likely beyond in a good cellar.

Production
Clos de la Roche is one of the crown jewels of Morey-Saint-Denis, a Grand Cru vineyard characterized by thin, stony limestone-clay soils over a hard rocky subsoil that naturally limits yields and concentrates flavor. The cool yet sunny exposition favors slow, even ripening of Pinot Noir, preserving acidity and aromatic detail. At Domaine Faiveley, grapes are typically harvested by hand in small crates to protect the fruit, with careful sorting in the winery to retain only the healthiest bunches. Vinification usually involves a combination of whole clusters and destemmed fruit, depending on the vintage, with a gentle extraction to respect the finesse of the terroir. The wine is then aged in French oak barrels—often with a significant proportion of new oak—to add structure and aromatic complexity, before bottling after a careful élevage designed to refine tannins while maintaining the vineyard’s signature tension and minerality.

Food & Serving
This Grand Cru Pinot Noir is a superb partner for refined, savory dishes such as roast duck with cherries, pigeon or squab, veal tenderloin, or a classic Boeuf Bourguignon made with high-quality beef. It also pairs beautifully with game birds, mushroom-based dishes (such as wild mushroom risotto or a truffle-infused poultry dish), and aged yet not overly powerful cheeses like Comté, Beaufort, or a mild washed-rind cheese. Serve at 15–17°C (59–63°F) to showcase its aromatic complexity and elegant texture. Decanting for 1–2 hours in its youth will help the wine open and soften the tannins; for bottles with some age, a more gentle, shorter decant is recommended primarily to remove any sediment and allow the bouquet to fully unfurl.
