Tasting Notes
In the glass, the 2019 displays a deep, vibrant garnet-ruby color, hinting at both concentration and freshness. The nose is complex and refined, unfolding with layers of blackcurrant, ripe plum, and dark cherry, interwoven with notes of graphite, cedar, humus, and forest floor. Delicate hints of spice, tobacco leaf, and a touch of smoke add further dimension as the wine opens.
On the palate, this is immediately silky and enveloping, with a cool, pure core of dark fruit wrapped in ultra-fine tannins. The structure is concentrated yet impeccably balanced, offering great precision and clarity of flavor. Savory, earthy undertones and subtle oak spice run beneath the clean, radiant fruit, leading to a long, linear finish that is fresh, mineral, and remarkably persistent. Domaine de Chevalier sits on the gravelly, well-drained soils that define the best sites of Pessac-Léognan, with a mix of gravel, sand, and clay over a mineral-rich subsoil that naturally limits yields and enhances complexity. The red is typically dominated by Cabernet Sauvignon, complemented by Merlot, Cabernet Franc, and Petit Verdot, all hand-harvested parcel by parcel at optimal ripeness. In the cellar, the grapes are carefully sorted and vinified in temperature-controlled vats to preserve purity and finesse, followed by élevage in French oak barrels (a portion new) to build structure and nuance without overwhelming the wine’s inherent elegance. The magnum format further enhances its capacity for slow, harmonious development.
Food & Serving
This 2019 Pessac-Léognan rouge is a superb partner to classic dishes such as roasted lamb, ribeye steak, duck breast, and game birds, as well as refined, earthy cuisine like mushroom ragout, truffle dishes, and aged hard cheeses. It also pairs beautifully with slow-braised beef, veal, or a richly flavored roast chicken. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and freshness. Young bottles will benefit from 1–2 hours in a decanter, while mature magnums may only need a gentle splash-decant to remove sediment and allow the bouquet to fully unfold.
