Tasting Notes
In the glass, Vin Jaune typically shows a deep golden to amber hue, reflecting its extended maturation. The nose is layered and singular, with aromas of walnut, hazelnut, curry spice, dried citrus peel, saffron, and subtle savory notes that evolve beautifully with air. On the palate, it is powerful, dry, and intensely structured, balancing freshness with concentrated flavors of roasted nuts, green apple, spice, and saline complexity. Thanks to its exceptional structure and oxidative style, it can age for decades, gaining even more depth and nuance over time.

Production
Produced in the Jura’s cool continental climate, this wine reflects the region’s limestone and marl soils, which help preserve acidity and tension. Vin Jaune is traditionally made from late-harvested Savagnin grapes and aged in barrel without topping up, allowing a protective veil of yeast (flor) to develop and shape its distinctive style.

Food & Serving
This is a superb partner for richly flavored dishes such as Comté cheese, poultry in cream sauce, mushrooms, veal, and dishes with walnuts or curry spices. Serve slightly cool, around 12–14°C, and decanting is optional but can help open up its aromatics if the wine is still tightly wound.
