Crafted from a meticulously selected blend of Merlot, Cabernet Franc and Cabernet Sauvignon, it delivers both immediate seduction and profound aging potential. Bottled in 1.5L, this magnum not only magnifies the wine’s complexity and longevity, but also marks it out as a centerpiece for serious collectors and memorable occasions.

Tasting Notes
In the glass, the 2019 Château Pavie is very deep garnet-purple, almost opaque at the core, hinting at its concentration and youth. The nose is intensely expressive and layered, bursting with crème de cassis, plum compote and blueberry preserves, followed by more subtle nuances of dark chocolate, licorice, camphor, rose petals, moist earth and a distinct mineral edge. On the palate, this is a rich, full-bodied Saint-Émilion with impressive depth and precision. Waves of black and blue fruits unfold in layers, framed by exotic spices and floral and graphite-like mineral notes. The tannins are abundant yet remarkably fine-grained and velvety, giving structure without harshness, while a vibrant line of acidity keeps the wine lifted and dynamic. The finish is very long and persistent, echoing dark fruit, cocoa and mineral complexity. Already tempting in its youth, the 2019 Pavie will reward patience; in magnum, it will comfortably develop over several decades, with an optimal drinking window beginning around 5–7 years from the vintage and extending 30+ years.

Production
Château Pavie’s 42-hectare vineyard lies on the southern slopes of Saint-Émilion, encompassing a mosaic of terroirs and microclimates that contribute to the wine’s hallmark power and finesse. The blend of approximately 50% Merlot, 32% Cabernet Franc and 18% Cabernet Sauvignon reflects both the estate’s complex soils and its pursuit of precision. Much of the vineyard is now farmed organically, with the goal of achieving 100% organic cultivation, and yields are kept low through rigorous green harvesting and cluster selection to maximize concentration and purity of fruit. Hand harvesting allows parcel-by-parcel picking at optimal ripeness, after which the grapes are carefully sorted. Vinification is tailored to each lot, typically involving temperature-controlled fermentation and extended maceration to extract color, aroma and fine tannins. The wine is then matured in high-quality oak barrels, a significant proportion of them new, to integrate structure and add further layers of complexity without overwhelming the fruit.

Food & Serving
This powerful yet refined Saint-Émilion is a natural partner for richly flavored dishes: think dry-aged ribeye or côte de boeuf, slow-braised lamb shank, venison or other game, and classic French preparations with truffle or wild mushrooms. It also pairs beautifully with well-aged hard cheeses such as Comté, Manchego or mature Gouda. Serve at 16–18°C (around 60–64°F) to highlight both fruit and freshness. In magnum, decanting is strongly recommended: allow at least 2–3 hours of aeration in its youth to unfurl the full aromatic spectrum and soften the tannins; older bottles will need less time but still benefit from a gentle decant to separate any sediment.
