The 2019 Château Pavie-Macquin Saint-Émilion in magnum format is a powerful yet refined expression of one of the Right Bank’s most prized limestone plateaus. Biodynamically farmed since 1990, this Grand Cru offers layered complexity, elegance, and a sense of place that will reward both patient cellaring and special-occasion drinking. Bottled in a generous 1.5L magnum, it’s ideal for collectors or for sharing at the table when only a great Saint-Émilion will do. What sets Pavie-Macquin apart is its deep clay and limestone soils, which lend both intensity and freshness to the Merlot-led blend, crafted under the guidance of Nicolas Thienpont and renowned consultant Stéphane Derenoncourt. The estate, lying next to Château Pavie and Château Troplong Mondot, has a long-standing reputation for producing some of the appellation’s most aromatic and concentrated wines, and 2019 is widely regarded as an outstanding vintage in Bordeaux.

Tasting Notes
In the glass, the 2019 Château Pavie-Macquin shows a deep garnet-purple hue, dense and youthful, with a glossy rim that hints at its concentration and age-worthiness. It immediately gives the impression of a serious, structured Saint-Émilion built for the long haul. The nose is generous and perfumed, opening with black cherries, ripe blackberries, and wild blueberries, wrapped in notes of crushed roses and subtle cedar. With air, more complex nuances emerge: cigar box, a touch of wild thyme, and delicate hints of sweet spice and graphite, all anchored by the limestone-driven freshness typical of the plateau. On the palate, the wine is medium to full-bodied, with an impressive core of dark berry and cherry fruit framed by firm, finely sculpted tannins. The texture is both structured and polished, giving a sense of precision rather than heaviness. The finish is long and refined, carried by vibrant acidity and a savory, mineral edge that invites another sip. This 2019 has excellent aging potential, particularly in magnum. It is already expressive with sufficient aeration, but will gain even more complexity, harmony, and tertiary notes over the next 10–20 years, and likely longer under proper cellaring.

Production
Château Pavie-Macquin sits on the elevated limestone plateau of Saint-Émilion, bordered by illustrious neighbors such as Château Pavie and Château Troplong Mondot. The vineyards are planted predominantly to Merlot, complemented by Cabernet Franc and a small proportion of Cabernet Sauvignon, rooted in deep clay over limestone bedrock that provides excellent drainage and imparts both power and tension to the wines. Farmed biodynamically since 1990, the estate follows meticulous, low-intervention practices: careful, often manual work in the vineyard, strict yield control, and hand-harvesting at optimal ripeness parcel by parcel. In the cellar, Nicolas Thienpont and Stéphane Derenoncourt apply a thoughtful, terroir-focused vinification, with gentle extraction to preserve fruit purity and fine tannins, typically followed by élevage in French oak barrels to develop aromatic complexity and structure without overwhelming the natural character of the wine.

Food & Serving
This is a classic, structured Saint-Émilion that shines alongside richly flavored dishes. Think roast lamb with herbs, dry-aged ribeye, beef Wellington, braised short ribs, or game birds like duck and pigeon. It also pairs beautifully with truffle risotto, mushroom-based dishes, and aged hard cheeses such as Comté or Pecorino. Serve at around 16–18°C (60–64°F) to showcase both the fruit and the aromatic complexity. Given its youth and structure, decanting is highly recommended: 1–2 hours for current drinking to allow the tannins to soften and the bouquet to fully open, especially from magnum.
