This vintage has been hailed by critics at the very highest level, combining power and precision in a way that only Cheval Blanc seems able to achieve. Presented in a 1.5L magnum, it’s built for long-term cellaring, special occasions, and collectors who value both rarity and refinement.

Tasting Notes
In the glass, the 2019 Cheval Blanc is deeply colored, a saturated ruby-purple that hints at both intensity and youth. The nose is complex and layered, initially offering ripe blackcurrant, plum, and black cherry, followed by notes of violet, graphite, cedar, tobacco leaf, and a delicate hint of cocoa and exotic spice. With air, more floral and mineral nuances emerge, adding lift and freshness. On the palate, this vintage shows extraordinary balance between concentration and finesse. The texture is velvety and seamless, with ultra-fine, ripe tannins framing waves of dark fruit, sweet herbs, crushed stones, and subtle savory tones. There is remarkable energy and precision, with vibrant acidity keeping the wine pure and focused through a very long, persistent finish. In magnum, the aging potential is outstanding: while already seductive in youth with sufficient aeration, it will evolve beautifully for 25–40+ years, gaining even more complexity, tertiary notes, and harmony over time.

Production
Château Cheval Blanc sits on the famed gravel and clay-gravel plateau of Saint-Émilion, unusually rich in Cabernet Franc–friendly soils for the Right Bank, with a patchwork of over 40 distinct plots contributing to the final blend. The vineyards are meticulously tended, with low yields and careful parcel selection at harvest; grapes are picked by hand at optimal ripeness to preserve both intensity and freshness. Vinification takes place in an ultramodern gravity-flow winery designed by architect Christian de Portzamparc, using 50 specially shaped, tronconic concrete vats that allow micro-vinification by plot. Concrete was chosen for its superior thermal inertia and gentle extraction qualities, while the conical form promotes softer, more controlled maceration and fermentation. Each parcel is vinified separately, giving the team maximum precision when assembling the grand vin, before élevage in high-quality French oak barrels that refine the tannins and build complexity without overwhelming the natural character of the fruit and terroir.

Food & Serving
The 2019 Cheval Blanc is a natural partner for refined, flavorful dishes such as roasted lamb with herbs, dry-aged ribeye or côte de boeuf, veal with morel cream sauce, or game birds like pigeon and duck. It also pairs beautifully with truffle-infused preparations, wild mushroom risotto, and mature hard cheeses such as Comté or aged Gouda. For optimal enjoyment, serve at 16–18°C (60–64°F). In its youth, especially in magnum, decant for 2–3 hours to allow the wine to fully open and reveal its aromatic depth; as it matures, a shorter decant of around 1 hour will usually suffice to remove any sediment and gently awaken the bouquet.
