Tasting Notes
In the glass, the 2019 Château Canon shows an intense, shimmering ruby-red hue with a vivid, almost jewel-like brightness at the rim. The nose is beautifully expressive and floral, wafting out notes of candied violets, black cherry compote, preserved plums, and a hint of kirsch. Underneath the pure fruit lie subtler layers of Ceylon tea, cinnamon powder, fine dark chocolate, and a gentle suggestion of fertile, damp earth, adding complexity and depth.
On the palate, this is medium to full-bodied, with a core of juicy black fruits—black cherry, blackberry and ripe damson—wrapped in incredibly silky, polished tannins. The texture is supple and caressing, yet supported by a fresh, linear acidity that keeps everything poised and energetic. Spices, cocoa, and a faint tea-leaf bitterness echo on the long, aromatic finish, which lingers with a graphite and floral lift. While already seductive, the wine clearly has the structure and balance to age gracefully for 15–25 years, developing more truffle, tobacco, and savory complexity over time.
Production
Château Canon’s 34 hectares sit on the very crest of Saint-Émilion’s famed limestone plateau, a terroir known for delivering wines of remarkable finesse, fragrance, and mineral-driven tension. The vineyard is predominantly planted to Merlot with a significant proportion of Cabernet Franc, rooted in thin clay over pure limestone, which naturally restricts yields and concentrates flavor. The grapes are harvested by hand, parcel by parcel, allowing optimal ripeness and careful selection in the vineyard and at the sorting table. In the cellar, Canon combines traditional savoir-faire with modern precision: gentle extraction, temperature-controlled fermentations, and a thoughtful élevage in French oak (with a judicious proportion of new barrels) to frame, rather than mask, the fruit. The estate relies on organic treatments in the vineyard—although not yet formally certified—reflecting a strong commitment to environmental stewardship and terroir expression.
Food & Serving
The 2019 Château Canon is a superb companion to classic French cuisine and refined, savory dishes: think roast lamb with rosemary, beef tenderloin with truffle jus, duck breast with cherries, or veal in a morel cream sauce. It also works beautifully with mushroom risottos, hard cheeses like Comté or aged Gouda, and delicately gamey dishes such as pigeon or guinea fowl. Serve at 16–18°C (about 60–64°F) to highlight its perfume and balance; if opened young, a gentle decant of 1–2 hours will help the wine unfurl its aromatics and soften further, while mature bottles should be decanted briefly and handled delicately to preserve their nuance.
