Tasting Notes
In the glass, the 2019 Canon-La Gaffelière shows a deep, vibrant ruby-red hue with a youthful, almost crystalline brightness at the rim. The nose is expressive and layered, opening with wild berries, blood orange and black cherries, followed by notes of exotic herbs, rose petals, violets and a delicate graphite-mineral edge. Subtle hints of cocoa, sweet spice and cedar from well-integrated oak add further complexity without overwhelming the fruit. On the palate, the wine is full-bodied yet wonderfully poised, with a supple, silky texture and a core of lively, pure fruit. Red and black berry flavors are wrapped in fine, velvety tannins, supported by fresh acidity that gives the wine both lift and length. The high proportion of Cabernet Franc marks the wine with its floral perfume, spice and linear structure, leading to a long, saline-tinged finish that feels both precise and persistent. Production
Château Canon-La Gaffelière lies on the southern slopes at the foot of the Saint-Émilion plateau, where limestone-clay and sandy-clay soils combine to create a nuanced and finely drained terroir ideal for Merlot and especially Cabernet Franc. The vines are farmed organically (and effectively biodynamically), with great emphasis on soil health, controlled yields and manual work in the vineyard, including hand-harvesting at optimal ripeness parcel by parcel. In the winery, fruit is sorted with great precision and vinified by plot in temperature-controlled vats to preserve aromatic purity and terroir expression. The 2019 was then aged in French oak barrels—of which a significant portion are new—for around 16–18 months, allowing the components to integrate while maintaining the wine’s freshness and definition.

Food & Serving
The 2019 Canon-La Gaffelière is an excellent partner for refined dishes such as roast lamb with herbs, veal tenderloin, duck breast, beef fillet, or game birds like pigeon or guinea fowl. It also pairs beautifully with truffle dishes, mushroom-based cuisine, and aged hard cheeses such as Comté or Manchego. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and balance; in its youth, decanting for 1–2 hours is strongly recommended to open up the floral and spicy nuances and soften the tannins. With additional bottle age, a shorter decant or careful service from the bottle will suffice.
