Tasting Notes
In the glass, the 2019 Hommage à Elisabeth Bouchet shows a deep, vibrant ruby-purple hue, with striking clarity and intensity that hints at its concentration. The nose is beautifully complex and precise: layers of black cherry, wild raspberry, and crème de cassis mingle with violet, graphite, cedar shavings, fine cigar box, and a subtle floral perfume typical of top-tier Cabernet Franc. Hints of crushed herbs, pencil lead, and delicate spice emerge with air, adding further nuance.
On the palate, this wine is both powerful and supremely elegant. The attack is silky yet focused, with finely etched tannins framing pure dark fruit, blackcurrant, and ripe plum, underpinned by notes of cocoa nib, licorice, tobacco leaf, and a cool, mineral backbone. Despite its concentration, the wine retains remarkable freshness and energy, driving through to a very long, layered finish. Production
Hommage à Elisabeth Bouchet is sourced from some of Château Angélus’s oldest Cabernet Franc vines, many planted in the early 20th century on prime Saint-Émilion terroir. These parcels sit on a mix of clay-limestone and sandy-clay soils, which provide excellent drainage and help produce wines of both aromatic intensity and structural finesse. Yields are deliberately kept very low, and harvesting is carried out by hand, with meticulous sorting in the vineyard and at the winery to ensure only perfectly ripe, healthy grapes are used. Vinification is highly precise, typically in small temperature-controlled vats, allowing for gentle extraction to capture the purity and perfume of Cabernet Franc without excess heaviness. The wine is then aged in high-quality French oak barrels—predominantly new—over an extended period, with careful cellar work to integrate the wood, polish the tannins, and preserve the wine’s remarkable definition and balance.

This is a wine that shines alongside refined, flavor-packed dishes. Think classic roast lamb with herbs, dry-aged ribeye or côte de boeuf, venison or other game with red wine reduction, and dishes with wild mushrooms or truffle accents. It also pairs beautifully with well-aged hard cheeses such as Comté, Parmesan, or mature Gouda. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and textural finesse. In its youth, this magnum benefits from a generous decant—2 to 3 hours is recommended—to allow the wine to open fully; with more bottle age, a shorter 60–90 minute decant is usually sufficient, mainly to remove any sediment and gently awaken the aromatics.
