Description
2019 Celler Credo Ambvivalent BIO is an organically and biodynamically farmed white wine that challenges expectations in the glass. Crafted from the rare red-skinned Xarel·lo (Xarel·lo Vermell) grown in the Alt Penedès, it sits beautifully between familiar and avant-garde, offering nuance, contrast and remarkable drinkability at just 11% alcohol. This cuvée is Celler Credo’s purest expression of Mediterranean Xarel·lo macerated on its skins, a natural wine made with minimal intervention and maximum respect for its origin.
Tasting Notes
In the glass, Ambvivalent shows a luminous pale red-gold hue, a subtle hint that this is a skin-contact wine made from a ‘red’ white grape. The nose is refreshing and lifted, with crisp apple, delicate citrus, and a fine thread of Mediterranean herbs and gentle spice. There’s an impression of purity and energy rather than overt fruitiness, underpinned by a light, stony suggestion of the calcareous soils.
On the palate, the wine is dry (just 0.5 g/l residual sugar), vivid and finely structured, with a precise, almost ‘perfect’ line of acidity that keeps everything taut and lively. Flavours of fresh apple and pear mingle with subtle citrus peel, white pepper, and a delicate savory, spicy note from the skin maceration. The texture is supple yet firm, giving a sense of grip without heaviness, and the finish is long, aromatic and layered, revealing more nuance with each sip. While it’s beautifully drinkable now, the combination of acidity, structure and minimal intervention suggests it can develop further complexity over the next 3–5 years, gaining more savory and honeyed notes.
Production
Ambvivalent is sourced from about one hectare of vines in the Ordal mountain area of Alt Penedès, at around 400 meters above sea level. The soils are clay-textured with a notable presence of limestone nodules, giving both water retention and mineral tension to the fruit. The vineyards are farmed according to strict organic and biodynamic principles, with spontaneous ground cover encouraged between the rows to loosen the soil, regulate water retention and drainage in this dry-farmed system, and promote biodiversity. Natural plant-based treatments (phytotherapy) are used to strengthen the vines and control fungal pressure instead of synthetic chemicals. All grapes are harvested by hand to ensure pristine fruit selection. In the cellar, the red Xarel·lo grapes undergo skin maceration to capture color, texture and aromatic complexity, and the wine ferments spontaneously with indigenous yeasts in stainless steel tanks and open oak vats. Sulfur additions are kept to an absolute minimum (around 8 mg/l, far below the EU limit for organic white wines), and the wine is bottled as a true, low-intervention “vin naturel” that faithfully reflects its terroir.
Food & Serving
This is a superb food wine, especially with dishes that benefit from both freshness and a touch of textural grip. It shines with grilled tuna, sushi and sashimi, where its acidity and subtle spice highlight the purity of the fish. It also pairs beautifully with crudo, ceviche, lightly spiced Asian dishes, simply grilled white fish, vegetable tempura, and Mediterranean small plates such as grilled vegetables, octopus or marinated anchovies. Serve at 10–12°C to show both its aromatics and structure; a brief decant of 15–30 minutes can help the wine open up and reveal its full spectrum of spice, fruit and mineral notes.
