Tasting Notes
In the glass, the 2019 Cardinale Cabernet Sauvignon is deeply opaque with a saturated ruby-purple core and a narrow, vibrant rim that hints at its youth and intensity. The nose is layered and expressive: ripe blackcurrant and blackberry compote are interwoven with dark cherry, rose petals, cedar shavings, espresso beans, graphite, and a touch of toasted bread and baking spice from refined oak aging.
On the palate, the wine is full-bodied yet impeccably balanced, with a luxurious, velvety texture and finely knit tannins. Dense flavors of blackcurrant, black plum, and mountain blackberry are framed by notes of dark chocolate, roasted coffee, tobacco leaf, cedar, and a subtle savory, mineral edge from the mountain fruit. The acidity is fresh and well-integrated, giving lift and definition to the rich core of fruit. The finish is long, persistent, and elegant, suggesting superb aging potential. While already impressive and approachable with proper aeration, this 2019 has the structure to evolve beautifully for 15–25 years in a good cellar.
Production
Cardinale sources fruit from some of Napa Valley’s most coveted mountain and hillside appellations, including Diamond Mountain, Spring Mountain, Howell Mountain, and Mount Veeder, as well as select benchland sites. These elevated, well-drained vineyards are defined by rocky, low-vigor soils and cooler night-time temperatures, producing small, concentrated berries with intense flavor and natural structure. For the 2019 Cardinale Cabernet Sauvignon, the final blend was born from eight appellations, eleven individual vineyards, and 32 separate vineyard lots, each vinified individually to highlight its character. The blend is composed of 91% Cabernet Sauvignon and 9% Merlot. Grapes are harvested by hand at optimal ripeness, sorted meticulously, and fermented in small lots to preserve nuance and site expression. After fermentation, the lots are aged separately in high-quality French oak barrels before a careful selection and blending process, resulting in a richly layered yet harmoniously composed wine that speaks both of Napa Valley and the vintage.
Food & Serving
This is a serious gastronomic wine that shines alongside equally refined dishes. Pair it with dry-aged ribeye, roast lamb with rosemary and garlic, slow-braised short ribs, venison, or rich dishes featuring wild mushrooms and truffle. Mature, hard cheeses such as aged Comté, Parmigiano-Reggiano, or well-aged Cheddar also suit the wine’s depth and structure. Serve at 16–18°C (60–65°F) to highlight the aromatics and texture. Decanting is highly recommended: allow at least 1–2 hours in a decanter for current drinking to open up the bouquet and soften the youthful tannins; older bottles will require less time.
