This cuvée is one of Bond’s most coveted bottlings, marrying power, precision and a deep sense of place. Tasting Notes
In the glass, the 2019 St. Eden shows a dense, opaque ruby-purple hue that hints at its concentration and youth. Swirled in the glass, it releases layered aromas of crème de cassis, blackberry and blackcurrant liqueur, intertwined with dark chocolate shavings, graphite, warm spice and a subtle note of roasted coffee and walnuts.
On the palate, this is a broad, opulent Cabernet with a strikingly pure core of black and blue fruits—blackberry, cassis and blueberry—wrapped in a cloak of mineral precision from the iron-rich, volcanic soils. The texture is plush yet impeccably structured, with finessed, fine-grained tannins that support the fruit rather than dominate it. Notes of toasted spice, cocoa and a subtle savory edge emerge with air, leading into a long, layered finish. While already seductive in its youthful richness, the 2019 St. Eden has the concentration and structure to age gracefully for two decades or more, gaining complexity and tertiary nuances with time in the cellar.
Production
St. Eden is a meticulously farmed, 11-hectare vineyard perched on a rocky hillside within the Vaca Mountains on Napa Valley’s eastern side, just north of the Oakville Crossroad. The site’s red, iron-rich volcanic soils—broken loose by ancient landslides—and its cooler northern exposure ensure a long, even ripening season, allowing Cabernet Sauvignon to achieve full phenolic maturity without excess heat. Grapes are harvested by hand in small lots at optimal ripeness, with rigorous sorting in the vineyard and at the winery to retain only pristine fruit. Vinification typically involves small-lot fermentations, attentive extraction to preserve finesse in the tannins, and aging in high-quality French oak barrels, a significant portion new, to frame the wine’s power with polish. The result is a terroir-driven Cabernet that captures the singular character of this hillside cru.

The 2019 Bond St. Eden is an ideal partner for richly flavored dishes that can match its depth and structure: think dry-aged ribeye, roast lamb with rosemary and garlic, venison, or slow-braised short ribs. It also pairs beautifully with dishes featuring wild mushrooms, truffle accents, or aged hard cheeses such as Comté or Parmigiano Reggiano. Serve at 16–18°C (60–64°F) for optimal expression. Decanting is strongly recommended—give it 2–3 hours in a broad-based decanter in its youth to allow the aromatics and texture to fully unfold; older bottles will need less time, around 60 minutes, to reveal their complexity.
