Tasting Notes
In the glass, the 2019 Pluribus is an opaque, inky ruby with a deep violet core and a fine, slow-moving rim—an immediate visual cue to its concentration. The nose is strikingly perfumed for such an intense wine: wild blackberry, blackcurrant and blueberry compote interweave with graphite, crushed rock, cedar, menthol, and hints of cacao, licorice and fresh tobacco leaf. Subtle tones of violets, pine forest and warm spices add layers as the wine opens. On the palate, Pluribus is full-bodied yet incredibly vertical and focused, driven by a core of dark, pure mountain fruit. Fine but firm tannins frame flavors of black cherry, cassis, black plum and boysenberry, supported by notes of espresso, cocoa nibs, pencil shavings and a cool, herbal undercurrent that evokes bay laurel and sage. The acidity is bright and energetic for Napa, giving the wine lift and precision and extending the finish into a long, mineral-tinged echo. Still youthful and tightly knit, the 2019 has substantial aging potential—expect a drinking window of 15–25 years from vintage, with the wine entering a particularly harmonious phase after 7–10 years of cellaring.

Production
Pluribus is sourced from a single, high-elevation vineyard on the eastern slopes of Spring Mountain in Napa Valley, where steep, rocky soils, mixed forest, and cooler temperatures shape a Cabernet of tension and aromatic complexity. The site’s well-drained volcanic and sedimentary soils naturally limit yields, concentrating flavor and structure in the small, thick-skinned berries. Grapes are harvested by hand in small lots at optimal ripeness, with rigorous sorting in the vineyard and again at the winery to ensure only the finest fruit is used. Fermentation takes place in temperature-controlled vessels, allowing for gentle extraction of color, tannin, and aromatics. The wine is then aged in a high proportion of new French oak barrels for close to two years, during which it gains additional texture, depth, and refinement before being bottled unhurriedly and released only when BOND deems it ready.

This is a serious, structured Napa Cabernet that shines with equally elevated cuisine: think dry-aged ribeye, grilled lamb chops with rosemary, venison, or braised short ribs. It also pairs beautifully with dishes featuring earthy components such as wild mushrooms, truffle-inflected sauces, or roasted root vegetables, as well as aged, hard cheeses like Comté, Parmigiano-Reggiano, or mature cheddar. Serve at 16–18°C (60–64°F) to highlight both its fruit and aromatics. For near-term enjoyment, decant for 2–3 hours to allow the wine to unwind and reveal its full complexity; with more bottle age, a gentle 60-minute decant is typically sufficient to remove sediment and open up the nose.
