Tasting Notes
In the glass, the 2018 Quilceda Creek Cabernet Sauvignon is deep, opaque ruby to nearly inky purple at the core, with a vibrant sheen that hints at its concentration and youth. The nose is lavish yet refined, opening with layers of blackcurrant, ripe blackberry, and black cherry, wrapped in notes of dark chocolate, violets, graphite, cedar, and a refined sweet spice from well-integrated oak.
On the palate, this is a full-bodied, richly textured Cabernet with impressive density and precision. Ripe cassis, blackberry compote, and black plum are framed by notes of espresso, tobacco leaf, baking spices, and a subtle mineral edge. The tannins are firm but exceptionally polished, giving the wine structure without harshness, while the fresh acidity keeps the richness in perfect balance. The finish is long, layered, and persistent, suggesting a wine that will reward patience. While already approachable after a generous decant, this 2018 has excellent aging potential—cellaring for 10–20 years (or more in ideal conditions) will allow the secondary notes of leather, cigar box, and truffle to fully emerge.
Production
Quilceda Creek sources fruit for this Columbia Valley Cabernet from a selection of premier sites in Washington, often including vineyards on well-drained, glacial and alluvial soils that naturally limit vigor and concentrate flavor. The Columbia Valley’s warm, dry days and cool nights promote slow, even ripening, preserving both power and freshness in the grapes. Harvest is typically carried out by hand at optimal ripeness, allowing for careful selection of only pristine clusters. In the cellar, the grapes are destemmed and fermented in stainless steel or temperature-controlled vessels to manage extraction and preserve aromatics, followed by extended maceration for depth and structure. The young wine is then aged in high-quality French oak barrels—often with a significant proportion of new oak—to build texture, complexity, and polish before blending and bottling.

This 2018 Cabernet Sauvignon shines alongside richly flavored, protein-driven dishes that can stand up to its intensity. Think prime rib, dry-aged ribeye, lamb chops with rosemary, braised short ribs, or venison with a red wine reduction. It also pairs beautifully with truffle-infused dishes, wild mushroom ragù, or aged hard cheeses such as Comté, cheddar, or Parmigiano-Reggiano. Serve at 16–18°C (60–65°F) to show its full aromatic range. For current drinking, decant for 1.5–2 hours to soften the tannins and allow the bouquet to unfurl; older bottles from this vintage (after extended cellaring) will need a gentler, shorter decant primarily to remove any sediment.
