2018 Mestres Visol Gran Reserva Brut Nature is a benchmark Cava for those who love precision, depth and absolutely dry bubbles. Crafted from traditional Catalan varieties and aged for an extended period on the lees, it offers the complexity you’d expect from fine sparkling wines at a very serious level. “Visol” is one of Mestres’ historic cuvées and is often cited as a reference for long‑aged, terroir‑driven Cava from Spain’s prestigious Cava region.

Tasting Notes
In the glass, the 2018 Visol Gran Reserva shows a bright straw-gold color with fine, persistent bubbles that form a delicate mousse. The nose is complex and refined, layering baked apple, pear skin and citrus peel with notes of toasted brioche, roasted almonds, dried flowers, fennel and a subtle saline edge. On the palate, this is dry and precise (true Brut Nature), with a taut, chalky backbone and vibrant acidity giving great lift and length. Flavors of lemon zest, crisp green apple and white stone fruit are wrapped in nuances of biscuit, hazelnut, anise and subtle smoke from long lees aging. The texture is creamy yet focused, finishing long, savory and mouthwatering. With its Gran Reserva status and extended time in bottle, this 2018 vintage has the structure to continue evolving beautifully over the next 5–8 years, gaining more nuttiness and complexity while retaining its freshness.

Production
Mestres works with vineyards in the historic heartland of Cava around Sant Sadurní d’Anoia in Catalunya, where limestone-rich soils and a Mediterranean climate with cooling influences from altitude help retain acidity and finesse. Visol is typically based on the classic Cava trio of Xarel·lo, Macabeo and Parellada, with Xarel·lo often playing the leading role for structure and age-worthiness. Grapes are harvested by hand into small boxes to preserve freshness, then gently pressed to obtain the finest must. Fermentation takes place in temperature-controlled conditions to protect delicate aromatics. The base wine is then bottled for a traditional-method second fermentation, followed by an extended aging period on the lees—far exceeding the legal minimum for Gran Reserva—before being disgorged without dosage (Brut Nature), allowing the pure expression of terroir and lees complexity to shine through.

Food & Serving
This is a gastronomic Cava designed for the table rather than just an aperitif. It pairs beautifully with oysters, sashimi and crudo, as well as shellfish like lobster, scallops and prawns. It’s equally at home with grilled white fish, roast chicken with herbs, Iberian ham, soft cheeses, and lightly creamy seafood pastas. Serve well chilled at around 8–10°C (46–50°F). Decanting is not necessary, but opening the bottle 10–15 minutes before serving and pouring into proper white wine or tulip-shaped sparkling glasses will help the wine open up its subtle layers.
