Domaine Leroy’s vineyards are cultivated according to rigorous biodynamic practices that Lalou Bize-Leroy has championed for more than three decades: low yields, meticulous canopy management, and strict respect for the rhythms of nature. Harvest is carried out entirely by hand, with an exacting selection in the vineyard and on sorting tables to retain only perfectly healthy, optimally ripe grapes. Vinification is traditional and minimalist, relying on indigenous yeasts and gentle extraction to preserve delicacy and terroir expression. The wine is then aged in fine-grained French oak barrels for an extended period, with careful topping and racking, and minimal intervention before bottling without unnecessary fining or heavy filtration.
