The region’s warm days and cool nights in 2018 allowed for a long, even growing season, giving grapes time to ripen fully while preserving acidity and aromatic detail. The Cabernet Sauvignon is hand-harvested in small lots at optimal maturity, then carefully sorted to ensure only pristine fruit makes it to the cellar. Vinification typically involves a gentle crush, a temperature-controlled fermentation to extract color and fine tannins, and an extended maceration for additional depth and texture. The wine is then aged in high-quality French oak barrels, a portion new, to add polish, structure and subtle spice without overwhelming the purity of the fruit.
