Tasting Notes
In the glass, the 2018 Kongsgaard Cabernet Sauvignon shows a deep garnet-purple hue, dense at the core with a vivid, youthful rim. The nose is immediately expressive and layered, offering ripe cassis, blackcurrant, black cherry, and plum, intertwined with notes of violet, crushed red cherry, cinnamon, and a subtle framework of fine oak and warm wood spice. On the palate, this is medium to full-bodied with a concentrated core of dark fruit—blackcurrant, blackberry, and plum—wrapped in a firm but ripe tannic structure. The texture is mouth-filling yet refined, with just the right lift of freshness to balance the richness of the fruit. True to John Kongsgaard’s philosophy of minimal intervention, fermentation relies on native yeasts and is followed by extended élevage in small French oak barrels, allowing the wine to develop texture, complexity, and harmony while preserving a pure expression of Napa Valley Cabernet.

This 2018 Cabernet Sauvignon is a natural partner for richly flavored dishes such as dry-aged ribeye, lamb chops with rosemary, slow-braised short ribs, or venison with a dark wine reduction. It also pairs beautifully with aged hard cheeses like Comté, aged Gouda, or mature cheddar. For best enjoyment, serve at 16–18°C (60–64°F).
