Tasting Notes
In the glass, the 2018 Bienvenues-Bâtard-Montrachet shows a luminous pale gold color with greenish reflections, deepening slightly as it opens in the glass. The nose is intricate and refined, offering layers of white flowers, lemon zest, and ripe orchard fruits such as pear and white peach, underscored by notes of crushed chalk, toasted hazelnut, and a subtle hint of fresh butter and brioche. With air, more complex nuances emerge: flint, wet stone, and a delicate, almost herbal lift. On the palate, this Grand Cru is both rich and supremely precise. A core of concentrated citrus and stone fruit is wrapped in a silky, almost creamy texture, balanced by a vibrant line of acidity and a powerful mineral drive. Nuances of almond, honeycomb, and gentle spice from élevage in fine French oak are seamlessly integrated rather than dominant. The finish is very long, pure, and saline, leaving a lingering impression of citrus peel and chalk. While already impressive, the structure and depth suggest a substantial aging potential of 10–20 years from the vintage, with the wine evolving towards more honeyed, nutty, and truffled complexity over time.

Production
Bienvenues-Bâtard-Montrachet is a Grand Cru vineyard situated on the Puligny/Chassagne-Montrachet border in the heart of Burgundy’s Côte de Beaune, characterized by its classic mix of limestone and clay soils over fractured bedrock, excellent drainage, and a gentle slope that favors perfect ripening. Jean-Claude Ramonet’s holdings here are planted predominantly to old-vine Chardonnay, which naturally limits yields and intensifies concentration. Grapes are carefully hand-harvested at optimal ripeness, with strict selection in the vineyard and again at the winery to ensure only pristine fruit is used. After a gentle pressing, the must is fermented in French oak barrels, a proportion of which are new, allowing for a slow, controlled fermentation and nuanced integration of oak. The wine then matures sur lie, with occasional bâtonnage depending on the vintage character, before being bottled with minimal intervention to preserve its terroir expression and natural tension.

Food & Serving
This Grand Cru Chardonnay pairs beautifully with refined, richly flavored dishes that can match its depth without overwhelming its elegance. Think butter-poached lobster, seared scallops, turbot or sole in beurre blanc, roasted chicken with morel cream sauce, or veal in a light, buttery jus. It also shines with luxurious mushroom dishes and aged, firm cheeses such as Comté, Beaufort, or a well-matured Gruyère. For optimal enjoyment, serve at 10–12°C (50–54°F); too cold and some of the complexity will be muted. Young bottles benefit from 45–60 minutes in a decanter to allow the aromatics to fully unfurl, while more mature examples can be opened and gently poured without extended aeration, to preserve their delicate tertiary nuances.
