The nose is refined yet powerful, opening with layered aromas of blackcurrant and blackberry compote, ripe cherry, and wild berries, interwoven with rose petals, crushed stones, cigar box, cocoa nibs, and a whisper of sweet spice. Production
Eisele Vineyard lies in the north-eastern corner of Napa Valley, just east of Calistoga at the foot of the Palisades Mountains, on well-drained, gravelly and alluvial soils that have been continuously cultivated since the 1880s. Originally planted to Zinfandel and Riesling and later to Cabernet Sauvignon in 1964, the site benefits from cool air descending from the hills and excellent drainage, yielding grapes of great concentration and natural balance. The vineyard has been farmed organically since 1998 and biodynamically since 2000, with meticulous hand-harvesting parcel by parcel to capture optimal ripeness and expression. In the cellar, the Cabernet Sauvignon is vinified with a focus on gentle extraction to preserve finesse, followed by élevage in carefully selected French oak barrels, allowing the wine to gain complexity, polish its tannins, and express the unmistakable character of the Eisele terroir.

This 2018 Estate Cabernet Sauvignon is a natural companion to richly flavored, protein-driven dishes such as grilled ribeye, braised short ribs, slow-cooked lamb shanks, or venison, and pairs beautifully with aged, firm cheeses like Comté, aged Gouda, or a mature cheddar. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and textural finesse. Young bottles will benefit from 1–2 hours in a decanter to fully unfurl their aromatics and soften the structure; older, cellared bottles can be decanted more gently, primarily to separate them from any sediment.
