The 2018 Domaine Perrot-Minot Gevrey-Chambertin ‘Justice des Seuvrées’ is a refined and deeply expressive red Burgundy from one of the Côte de Nuits’ most respected artisan growers. Sourced from a single 1.5-hectare site of mature vines, it offers a step up in depth and complexity from the domaine’s classic village Gevrey. Crafted under the precise hand of Christophe Perrot-Minot, this cuvée captures the essence of Gevrey’s power, framed with the finesse and purity that define the estate’s style.

Tasting Notes
In the glass, the 2018 ‘Justice des Seuvrées’ shows a vibrant, medium ruby colour with a luminous core and delicate garnet reflections at the rim, hinting at its concentration and youth. The nose is immediately engaging, with layers of ripe red and black cherry, wild strawberry and raspberry coulis, interwoven with notes of rose petals, violets, subtle forest floor, and finely etched spice. Gentle hints of graphite, crushed stone, and a touch of well-judged oak (sandalwood, vanilla pod, a whisper of smoke) add depth without dominating. On the palate, this is a concentrated yet finely textured Gevrey, with silky tannins and a precise, mineral-driven backbone. Flavours of dark cherry, black raspberry and plum are lifted by notes of orange zest, licorice, and savoury herbs, leading into a long, focused finish marked by saline minerality and delicate spice. The 2018 vintage brings generous fruit and a supple mid-palate, but the structure promises graceful evolution in bottle. Enjoyable now with a decant, it should develop beautifully over the next 8–15 years, gaining further complexity, forest floor nuances and truffle notes with time.

Production
The ‘Justice des Seuvrées’ parcel lies on classic Gevrey-Chambertin clay-limestone soils, which naturally balance power and freshness in Pinot Noir, giving both depth of fruit and a clear mineral line. The vines average around 45 years of age, limiting yields and concentrating flavour in the small, thick-skinned berries. Harvest is carried out exclusively by hand, allowing for strict selection in the vineyard and again at the sorting table. In 2018, picking took place from 5th to 16th September to capture optimal ripeness while preserving acidity. All the fruit was destemmed, with about 50–60% of the berries kept whole to enhance aromatic complexity and texture. Vinification follows a philosophy of minimal intervention: gentle extraction, careful temperature control, and a measured use of new oak so that the wine expresses its terroir rather than the barrel. The result is a deeper, more complex cuvée than the domaine’s regular village Gevrey, with extra dimension and length.

Food & Serving
This Gevrey-Chambertin ‘Justice des Seuvrées’ is a superb partner for elegant yet flavourful dishes. Think roast duck breast with cherry or cranberry jus, pigeon or guinea fowl, veal chops with morel sauce, or slow-cooked lamb shoulder with thyme and garlic. It also shines with game birds, mushroom-based dishes (wild mushroom risotto, porcini tagliatelle), and earthy cheeses such as aged Comté or mild Époisses. Serve at 15–16°C (59–61°F) to highlight its aromatics and finesse. Young bottles will benefit from 45–60 minutes in a decanter to open the bouquet and soften the tannins; mature bottles should be handled more gently, with a brief, careful decant if needed to remove sediment.

Domaine Perrot-Minot, based in the heart of the Côte de Nuits in Burgundy, traces its origins back to the first half of the 19th century and has remained in the same family for five generations. Since taking over in 1993, Christophe Perrot-Minot has elevated the estate to the top tier of Burgundy, becoming a benchmark for pure, terroir-focused Pinot Noir. The domaine farms around 12 hectares of vines across some of the most sought-after villages in the region, including Gevrey-Chambertin, Chambolle-Musigny, Morey-Saint-Denis and Vosne-Romanée, with many parcels planted to very old vines that naturally yield intensely concentrated fruit. Christophe’s commitment to biodynamic principles, low yields, meticulous hand-harvesting and minimal intervention in the cellar has earned widespread critical acclaim, particularly for his ‘Ultra’ cuvées such as La Richemone and Combe d’Orveau. Today, Domaine Perrot-Minot is recognized as one of the leading lights of the Côte de Nuits, producing wines prized by collectors for their precision, elegance and capacity to age.
