The 2018 Domaine Lamy-Pillot Chassagne-Montrachet 1er Cru Les Vergers Blanc is a refined, mineral-driven white Burgundy from one of Chassagne’s classic premier cru sites. Crafted from old-vine Chardonnay planted in 1972, it offers a precise balance of ripe fruit, fresh acidity and subtle oak. Produced in very limited quantities—around 900 bottles in good vintages—this cuvée is a highly sought-after expression of Chassagne-Montrachet’s limestone-rich terroir, combining elegance, tension and age‑worthy structure.
Tasting Notes
In the glass, the 2018 Les Vergers shows a luminous pale gold color with subtle green reflections, signaling both ripeness and freshness. The nose is immediately inviting yet refined, with aromas of white peach, ripe pear and lemon zest interwoven with notes of acacia blossom, fresh cream and chalky wet stone. Gentle hints of toasted hazelnut, brioche and a whisper of vanilla reveal the discreet use of oak.
On the palate, the wine is poised and elegant, with a juicy, mouth-filling texture that remains beautifully lifted by bright, citrus-driven acidity. Flavors of stone fruits, Meyer lemon and crisp apple are layered with saline minerality, crushed shell and a delicate touch of spice from the barrel élevage. The oak is carefully judged—supportive rather than dominant—framing the fruit and emphasizing the wine’s mineral backbone. Already harmonious and well-balanced in its youth, this 2018 has the structure and concentration to evolve gracefully over 8–12 years from vintage, gaining further complexity, nuttiness and honeyed depth with cellar age.
Production
Les Vergers is a premier cru vineyard in Chassagne-Montrachet, and Lamy-Pillot’s parcel is just 0.14 hectares (1,400 m²), planted in 1972 on a limestone plateau with a southeast exposure. This stony, well-drained terroir naturally limits vigor, concentrates the fruit and provides excellent water management in both wet and dry years, all of which contribute to the wine’s hallmark minerality and precision. Grapes are carefully harvested by hand at optimal ripeness to preserve freshness and purity. In the cellar, Florence and Sébastien Caillat favor a measured, terroir-focused approach: gentle pressing, followed by fermentation and élevage in oak barrels for around 16 months, with a maximum of 25% new oak. Regular, weekly bâtonnage (lees stirring) adds texture and complexity without obscuring the vineyard’s character, resulting in a wine that is both succulent and finely etched.
Food & Serving
This Chassagne-Montrachet 1er Cru Les Vergers is a superb partner for refined seafood and white meat dishes. Think butter-poached lobster, scallops in a light cream or citrus beurre blanc, turbot or sole with beurre noisette, roast chicken with morels, veal blanquette, or seared turbot with a velouté sauce. It also pairs beautifully with richer poultry dishes and fine cheeses such as Comté, aged Gruyère or a creamy Brillat-Savarin. Serve at 10–12°C (50–54°F) to highlight its freshness and aromatic complexity; as it warms slightly in the glass, more depth and nuance will emerge. For younger bottles, a gentle decant of 20–30 minutes can help the wine open up, while mature bottles are best handled delicately and poured directly after allowing them to rest upright to settle any sediment.

Domaine Lamy-Pillot is a family estate rooted deeply in Chassagne-Montrachet, founded in 1973 when René Lamy and Thérèse Pillot—both from long-established Burgundian wine families—joined their respective legacies. The Pillot lineage in particular can be traced back to the commune of Chassagne-Montrachet as far as 1595, underscoring the family’s centuries-long connection to this revered terroir. Today the domaine farms around 20 hectares across 27 appellations, primarily in Chassagne-Montrachet and Saint-Aubin, with the next generation—daughters Florence and Karine and their husbands—at the helm. Since 1998, Florence and her husband, oenologist Sébastien Caillat, have overseen the winemaking, bringing together classical Burgundian training from Beaune, Strasbourg and Dijon with experience gained from numerous internships in France and abroad. Their approach is defined by precision, restraint in oak use and a strong commitment to expressing each parcel’s identity, making Domaine Lamy-Pillot an important and respected name in the southern Côte de Beaune.
