Tasting Notes
In the glass, the 2018 Pavie Decesse shows a deep, opaque ruby-purple hue with an almost inky core, hinting at both youth and concentration. The nose is immediately seductive and layered: ripe black cherries and blueberries mingle with cedar, toasted oak, clove, nutmeg and a distinct walnut note, all wrapped in a subtle floral lift and a touch of graphite and dark chocolate. On the palate, the wine is full-bodied and dense yet impeccably balanced, with a firm, beautifully knit structure built on fine-grained, velvety tannins. The dark fruit core—black cherry, plum and blueberry—is framed by spicy oak, licorice, tobacco leaf and a savory, mineral-driven undertone from the limestone soils. The finish is long, precise and persistent, carrying notes of spice and dark fruit long after the last sip. Still youthful and tightly coiled, this 2018 has excellent aging potential; it will benefit from several more years in bottle and should evolve gracefully for 15–25 years, gaining further complexity and silkiness over time.

Production
Rooted on the high limestone plateau of Saint-Émilion, Château Pavie Decesse benefits from one of the region’s most prized terroirs: thin, well-drained soils over pure limestone, which naturally limits yields and imbues the wines with freshness, tension and a distinct mineral edge. The 3.5-hectare vineyard is planted predominantly to old-vine Merlot (around 90%) with a smaller proportion of Cabernet Franc (about 10%), with an average vine age of roughly 45 years. Grapes are hand-harvested in small batches and rigorously sorted to ensure only perfectly ripe fruit makes it to the cellar. Fermentation takes place in temperature-controlled wooden and stainless-steel vats to preserve purity of fruit and finesse of tannin, followed by maturation in 100% new French oak barrels for 18–24 months, adding depth, polish and a refined spice character without overwhelming the natural expression of the terroir.

Food & Serving
This is a richly structured Saint-Émilion Grand Cru that shines alongside equally refined, flavorful cuisine. Classic pairings include roast lamb with herbs, beef tenderloin or ribeye, duck breast, and slow-braised dishes such as short ribs or veal shank. It also complements truffle-infused dishes, wild mushroom risotto, and aged hard cheeses like Comté or Parmigiano-Reggiano. Serve at 16–18°C (60–64°F) to showcase its aromatic complexity and textural finesse. For current drinking, decanting for 2–3 hours is recommended to allow the wine to open and soften; as it matures, a shorter decant of about 1 hour will be sufficient to remove sediment and bring out its tertiary nuances.
