On the palate, the wine is medium-bodied yet remarkably intense, with a precise, linear structure. Production
Pavillon Blanc is produced from 100% Sauvignon Blanc planted on roughly 12 hectares of gravelly, well-drained soils within the historic Château Margaux estate in the Médoc. These deep gravel terroirs, over limestone and clay subsoils, promote excellent root penetration and naturally low yields, concentrating flavor and enhancing aromatic finesse in the grapes. Harvesting is meticulous and typically carried out by hand in multiple passes through the vineyards, ensuring only perfectly ripe, healthy bunches are selected. In the cellar, the must is gently pressed and then fermented—traditionally in temperature-controlled vessels, often with a significant proportion in French oak barrels—to preserve aromatics while building texture and depth. The wine is then aged on fine lees, with carefully managed bâtonnage as appropriate, to enhance mouthfeel and complexity while maintaining the hallmark freshness and precision that define Pavillon Blanc.

The 2018 Pavillon Blanc is a superb partner for refined seafood and delicately flavored dishes. It pairs beautifully with oysters, scallops, turbot, sole, or lobster, as well as sushi, sashimi, and crudo, where its citrus and mineral profile complements the purity of the fish. It also shines alongside dishes featuring lemon, fresh herbs, or light cream sauces—think roast chicken with tarragon, grilled langoustines, goat’s cheese, or asparagus risotto. For optimal enjoyment, serve chilled but not too cold, ideally around 9–11°C (48–52°F), to allow the aromatics to fully express themselves.
