Château Haut-Bailly lies on a prized gravel ridge in Pessac-Léognan, in the historic Graves area just south of Bordeaux city. The vineyard’s deep gravel and sand over limestone and clay create naturally well-drained, low-vigor soils that favor Cabernet Sauvignon and its Bordeaux companions, contributing to the wine’s signature finesse and mineral backbone. The estate is planted predominantly to Cabernet Sauvignon, complemented by Merlot, with smaller proportions of Cabernet Franc and Petit Verdot, all harvested by hand plot-by-plot at optimal ripeness. In the cellar, fruit is carefully sorted before fermentation in temperature-controlled vats, allowing for a gentle extraction of color, tannin, and aromatics. The wine is then matured in French oak barrels—typically a significant proportion new—for around 16–18 months, with regular tasting and blending to ensure harmony, complexity, and the polished texture for which Haut-Bailly is known.
