Ao Yun Shangri-La 2018 is one of the most talked‑about wines in modern fine wine, proving that China can stand shoulder to shoulder with the world’s great terroirs. Grown at dizzying altitudes on the slopes beneath the sacred Meili Snow Mountain in Yunnan, this is a Bordeaux‑inspired blend crafted under the aegis of luxury group LVMH and Bordeaux‑born winemaker Maxence Dulou (ex‑Cheval Blanc, Quinault L’Enclos). The 2018 vintage is a landmark release, produced in tiny quantities and already regarded as one of the finest red wines ever to come out of China. This cuvée marries the structure and sophistication of Cabernet Sauvignon with the exotic spice and mountain freshness of its Himalayan setting, offering a truly unique expression of high‑altitude viticulture. Ao Yun – meaning “flying above the clouds” in Mandarin – is the culmination of a long search, begun in 2008, to find the perfect Chinese site for a world‑class wine in a Bordeaux style. Today it stands as a modern icon and a powerful symbol of China’s emergence as a serious fine‑wine producer.
Tasting Notes
In the glass, Ao Yun 2018 shows an intense, deeply saturated ruby colour with a vibrant, almost translucent rim that hints at its mountain freshness and slow, even ripening. Swirled in the glass, it clings with thick, elegant legs, signalling both concentration and polish.
The nose is complex and layered, offering a captivating mix of ripe blackcurrant and black cherry, wild blueberry and mulberry, framed by notes of dried violets, graphite and cigar box. With air, more subtle nuances emerge: crushed Sichuan pepper, star anise, cedar shavings, tobacco leaf, fine black tea and a touch of incense and forest floor that speaks to its high‑altitude origin rather than heavy oak.
On the palate, the wine is full‑bodied yet remarkably poised, combining dense, dark fruit with a striking line of freshness. Ripe cassis, black plum and blackberry are wrapped in velvety but firmly structured tannins, with Cabernet Franc and Merlot adding floral lift and mid‑palate suppleness. Hints of cocoa nib, pencil shavings, savoury herbs, licorice and sweet baking spice unfurl across the long finish, while Syrah and Petit Verdot bring subtle spice and extra colour. The balance between tension and richness is a hallmark of Ao Yun: powerful, but never heavy, with a cool, mountain‑air vibrancy that keeps everything in perfect focus.
This 2018 vintage has impressive aging potential. It is already beautifully expressive after proper aeration, but the compact tannin structure, fresh acidity and depth of fruit suggest a drinking window of 15–20 years from vintage, and likely longer in excellent cellars. Expect further complexity to develop over time, with more tertiary notes of leather, truffle and cigar emerging while the fruit retains its purity.
Production
Ao Yun’s vineyards are scattered across four remote villages near Shangri‑La in northern Yunnan, planted on steep, terraced slopes between approximately 2,200 and 2,600 metres above sea level. This extreme altitude delivers intense UV light, large diurnal temperature swings and naturally low disease pressure, allowing for long, slow ripening of the grapes while preserving acidity and aromatic complexity. Soils are predominantly alluvial and colluvial, with a mix of gravel, sand, clay and stones that provide excellent drainage and help to build structure and minerality in the wines.
The vineyards are farmed entirely by hand by local farming families, meticulously trained in viticulture while remaining faithful to long‑standing agro‑ecological traditions. More than 300 parcels are divided into over 700 micro‑plots, each picked separately according to its specific maturity profile. Only about half of the fruit harvested in 2018 was ultimately selected for the final blend, reflecting an uncompromising approach to quality. The wine is a predominantly Cabernet Sauvignon‑led blend, complemented by Cabernet Franc, Merlot, Syrah and Petit Verdot, vinified parcel by parcel to capture the nuance of each site. Fermentations are carefully managed to extract fine tannins rather than brute power. Maturation is deliberately refined rather than ostentatious: around half the production spends an initial period of about five months in traditional vessels such as clay or concrete, followed by roughly ten months in French oak barrels, with a relatively modest proportion of new wood. The objective is to integrate the oak seamlessly, enhancing texture and complexity without overshadowing the singular character of the Himalayan terroir.
Food & Serving
Ao Yun 2018 is a serious gastronomic wine, best matched with richly flavoured, refined dishes that can stand up to its structure and depth. Classic pairings include roast or grilled lamb with rosemary, dry‑aged ribeye or Wagyu beef, venison or other game birds, and slow‑braised short ribs or oxtail. The wine’s aromatic complexity also makes it an intriguing partner for Chinese and pan‑Asian cuisine: think Peking duck with five‑spice, red‑braised pork, Mongolian lamb, or Yunnan‑inspired dishes featuring mushrooms, aromatic herbs and mild chili heat. Mature hard cheeses such as Comté, aged Gouda or well‑aged Cheddar also work beautifully.
For optimal enjoyment, serve at 16–18°C (60–64°F). The 2018 vintage benefits from generous aeration: decant for at least 2 hours if drinking now, and up to 3–4 hours for maximum aromatic expression. In its youth, a large‑bowl Bordeaux or Cabernet glass will help showcase the layered bouquet and allow the tannins to soften and the wine’s distinctive mountain freshness to shine.

This search led the team far from the country’s better‑known wine regions to a remote corner of northern Yunnan, near the town of Shangri‑La at the foothills of the Himalayas, in the shadow of the sacred Meili Snow Mountain.
