Tasting Notes
In the glass, this 2017 Chassagne-Montrachet 1er Cru Les Macherelles shows a luminous pale gold color with subtle green reflections, hinting at both its youth and its freshness. The nose opens with notes of ripe pear and white stone fruits, layered with nuances of muscat-like floral tones, nutmeg, and a delicate touch of pastry and wet stone.
On the palate, the wine is medium to full-bodied, offering a rich, textural mouthfeel supported by a vibrant backbone of acidity. Flavors of pear, apricot, and white peach are interwoven with gentle spice, nutmeg, and a discreet mineral salinity that stretches through the finish. Les Macherelles is a premier cru climat in Chassagne-Montrachet, rooted in classic Côte de Beaune limestone with clay-limestone topsoils that are ideal for Chardonnay, lending both richness and a strong mineral spine. François Carillon works his holdings with careful, vineyard-first attention—low yields, meticulous canopy management, and selective hand harvesting ensure only optimally ripe, healthy grapes reach the cellar. In the winery, the fruit is gently pressed and the must is allowed to settle before fermenting in oak, typically with a judicious proportion of new barrels to frame, rather than dominate, the fruit. Aging on fine lees adds texture and complexity, while controlled bâtonnage and a measured élévage preserve the wine’s natural tension and freshness, resulting in a Chassagne that is both structured and finely etched.

This Chassagne-Montrachet 1er Cru Les Macherelles is a superb partner for refined dishes such as butter-poached lobster, seared scallops, roast chicken with morels, veal in a light cream sauce, or firm, creamy cheeses like Comté and aged Gruyère. Domaine François Carillon, established in its current form in 2010, is the continuation of a family legacy that has been rooted in Puligny-Montrachet since at least 1520. The Carillon name is one of the most respected in the Côte de Beaune, with generations of vignerons shaping the reputation of Puligny and Chassagne for world-class Chardonnay. After the estate was divided between brothers François and Jacques, François created his own domaine and quickly became a benchmark for refined, terroir-driven white Burgundy. Working around sixteen hectares across Puligny-Montrachet, Chassagne-Montrachet, and Saint-Aubin, he focuses almost exclusively on Chardonnay and is renowned for wines that marry depth and minerality with precision and finesse—bottlings that are now fixtures on the lists of top restaurants around the world.
