Tasting Notes
In the glass, the 2017 Clos Sorbet shows a bright, translucent ruby-red hue, with the gentle garnet highlights that hint at its early evolution. Swirling reveals fine, slow-moving tears along the sides of the glass, suggesting both concentration and a silky structure.
The nose opens with pure red berries – wild strawberry, red cherry and raspberry – layered with rose petals, fresh cranberry and a dusting of spice. Production
Clos Sorbet is a small, walled Premier Cru vineyard in Morey-Saint-Denis, planted on classic Burgundian limestone and clay with a high proportion of stony subsoil. This terroir naturally limits yields and promotes excellent drainage, giving wines with fine aromatics and a distinctive mineral backbone. Domaine Michel Noëllat works with careful, predominantly manual vineyard practices, including hand-harvesting at optimal ripeness to preserve the delicate Pinot Noir berries. In the cellar, grapes are typically sorted by hand, partially destemmed depending on vintage, and fermented with indigenous yeasts in temperature-controlled vats to capture both purity of fruit and terroir expression. Gentle extraction – via pump-overs and light punch-downs – emphasizes finesse over power. The wine is then aged in French oak barrels, with a measured proportion of new wood, for around 12–18 months before being bottled in magnum to encourage slow, graceful ageing and added complexity.
