In this cooler, challenging vintage, Cheval Blanc shines with lifted aromatics, impressive purity of fruit, and a beautifully sculpted structure. A notably high proportion of Cabernet Sauvignon in the blend gives this wine a distinctive character, adding tension and complexity to the château’s signature Merlot–Cabernet Franc core.

Tasting Notes
In the glass, the 2017 Cheval Blanc shows a deep garnet-purple hue, dense yet vibrant at the rim, hinting at both youth and concentration. The nose opens gradually, rewarding patience with layered aromas of plum compote, blackcurrant preserve, and kirsch, joined by notes of redcurrant, crushed violets, and red roses. More time reveals subtle hints of anise, Sichuan pepper, graphite shavings, and charcoal, adding a refined, almost architectural complexity to the bouquet. On the palate, this is medium to full-bodied, with impressive intensity that unfolds in waves rather than overwhelming all at once. Dark and red berry fruits intermingle with savoury mineral undertones and delicate floral nuances. The tannins are fine-grained, silky yet firm, creating a refined backbone that frames the fruit rather than dominates it. A bright, fresh acidity runs through the wine, providing lift and definition, and leading into a very long, perfumed finish. While already harmonious in its youth, this 2017 Cheval Blanc has clear aging potential, likely evolving beautifully over 15–25 years, gaining further complexity and tertiary nuances of tobacco, truffle, and forest floor with time in the cellar.

Production
Rooted in the gravel and clay soils of Saint-Émilion’s famed right bank, Château Cheval Blanc benefits from an unusually high proportion of gravel for the appellation, a key factor in its ability to ripen Cabernet varieties alongside Merlot. The 2017 blend is composed of approximately 56% Merlot, 29% Cabernet Franc, and an atypically high 15% Cabernet Sauvignon, a choice reflecting both the character of the vintage and the precision of parcel selection. Each plot is harvested by hand at optimal ripeness, then vinified separately in 50 specially designed, truncated-cone concrete vats that enable meticulous micro-vinification by parcel. Concrete is used for its thermal inertia and neutrality, while the tronconic shape allows for gentle extraction and a more natural infusion of color, tannin, and aroma. The entire process relies on gravity-flow principles, avoiding pumping of must or wine to preserve delicacy and purity. This high-tech, architect-designed cellar—created by Christian de Portzamparc—represents a major investment in quality, allowing Cheval Blanc to fine-tune every detail from grape to bottle.

Food & Serving
This 2017 Château Cheval Blanc pairs beautifully with refined, delicately prepared dishes that complement its elegance and layered complexity. Consider roasted lamb with herbs, veal tenderloin, pigeon or duck breast, or classic Bordeaux pairings such as entrecôte with jus and wild mushrooms. It also works superbly with truffle-based dishes, tournedos Rossini, or aged hard cheeses like Comté or aged Gouda that echo its savoury depth. Serve at 16–18°C (60–64°F) to highlight the wine’s aromatics and freshness. In its youth, decanting for 1–2 hours is recommended to help the bouquet open and soften the tannins; as the wine matures, a shorter decant or careful service from bottle will suffice to preserve its more delicate tertiary nuances.
