The 2017 Château Canon Saint-Émilion Premier Grand Cru Classé is a poised, classically styled Right Bank Bordeaux that beautifully reflects its limestone plateau origins. Crafted primarily from Merlot with a judicious portion of Cabernet Franc, it delivers both concentration and finesse in equal measure. As one of the historic reference points of Saint-Émilion, Château Canon continues to refine its style, and 2017 is a superb example of the estate’s modern elegance and precision.

Tasting Notes
In the glass, the 2017 Château Canon shows a deep, luminous purple hue, hinting at both youth and intensity. The nose is immediately expressive, layering baked black cherries, kirsch and plum compote with black raspberries, rose petals, fine Ceylon tea and black olives, all underpinned by a subtle, earthy note of fertile, dark soil and crushed stone. On the palate, this is medium-bodied yet remarkably complete, emphasizing grace over sheer power. Silky, fine-grained tannins frame a core of ripe black and red fruits, with a seamless freshness that carries the wine through a long, mineral-driven finish. The oak is beautifully integrated after 18 months in French barrels (50% new), adding gentle notes of spice and structure without overshadowing the fruit. Approachable in its youth with a short decant, it will continue to gain complexity and refinement over the next 10–15 years, and potentially longer in good cellars.

Production
Château Canon’s vineyards sit on the prized limestone plateau at the very top of Saint-Émilion, a terroir renowned for producing wines of tension, perfume and elegance. The 34-hectare estate, farmed with an emphasis on respect for the environment and the use of organic treatments (though not formally certified), is planted mainly to Merlot with a significant share of Cabernet Franc. For the 2017 vintage, the blend is 77% Merlot and 23% Cabernet Franc. Grapes are harvested by hand in small parcels to ensure optimal ripeness and careful selection. In the cellar, the wine is vinified traditionally with a focus on gentle extractions to preserve finesse and purity of fruit, then aged for 18 months in French oak barrels, half of which are new, to add complexity, texture and aging potential without overwhelming the natural character of the terroir.

Food & Serving
This Saint-Émilion Premier Grand Cru Classé is a versatile partner at the table, pairing beautifully with roasted lamb, beef tenderloin, game birds, and refined dishes such as veal with truffle jus or mushroom-based risottos. It also complements hard and semi-hard cheeses like Comté, aged Gouda or Manchego. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and supple texture. Decant for about 1–2 hours in its youth to open up the nose and soften the tannins; older bottles will require gentler, shorter decanting mainly to separate from sediment.

Château Canon is one of the historic estates of Saint-Émilion, officially classified as Premier Grand Cru Classé, and long admired for its privileged location on the limestone crest overlooking the village. Owned by the Wertheimer family—who also own Château Rauzan-Ségla in Margaux and the fashion house Chanel—the property has benefited from significant investment and a quality-driven philosophy. Under the guidance of director John Kolasa (and successive teams including a new generation of cellar masters), Château Canon has steadily risen to the top tier of the appellation, regularly producing wines that rival the greatest names of Saint-Émilion in finesse, consistency and aging capacity. Its recent vintages have drawn critical acclaim for their combination of precision, elegance and authentic expression of the plateau’s limestone terroir.
