Description
2017 Acústic Celler Auditori is a powerful, old-vine red from DO Montsant, just outside the famed Priorat region in Spain. Crafted by Albert Jané with a low-intervention, “acoustic” philosophy, it lets the voice of the ancient vines and rugged Catalan landscape shine through without amplification or artifice. This cuvée comes from 80–100-year-old vineyards and is a quintessential expression of Montsant’s depth, warmth and authenticity.
Tasting Notes
In the glass, the 2017 Auditori shows a deep, dense garnet-red core with bright ruby highlights at the rim—visually compact and almost opaque, hinting at its concentration. The nose is immediately inviting and sun-drenched, with aromas of ripe black cherries, plum compote and wild berries layered over notes of dried Mediterranean herbs, licorice, subtle violet and a delicate touch of sweet spice from well-judged French oak.
On the palate, this is a full-bodied, tightly woven red with a striking intensity that unfolds over the first few sips. Dark fruit—blackberry, black cherry and cassis—is wrapped in fine-grained, ripe tannins and a savory mineral edge typical of Montsant’s mountain terroir. Hints of cocoa, tobacco leaf and gentle toast add complexity, while a surprising freshness keeps the wine vibrant rather than heavy. The structure is compact yet balanced, with enough acidity and tannin to carry the concentrated fruit. This 2017 has clear aging potential: expect it to evolve gracefully over 8–12 years from vintage, gaining more tertiary notes of leather, dried flowers and forest floor.
Production
Auditori is sourced from very old bush vines, aged 80 to 100 years, rooted in the diverse, stony soils of DO Montsant, an area encircling Priorat where the Mediterranean climate and marked diurnal shifts yield grapes of great intensity and natural balance. The vineyards are farmed organically and worked by hand, following biodynamic principles without excess—respecting the rhythm of the plants and the land. Grapes are harvested manually at optimal ripeness to ensure careful selection in the vineyard, then brought to the cellar where vinification is kept as pure and “unamplified” as possible. Fermentation takes place with a focus on preserving fruit and terroir expression, and the wine is subsequently matured for around 13 months in lightly toasted French oak barrels, chosen so that the grape and place, rather than the wood, remain at the forefront.
Food & Serving
This is a gastronomic red that shines alongside rich, savory dishes. Pair it with slow-braised lamb shanks, Catalan-style pork cheeks, duck breast with cherry reduction, grilled ribeye, or hearty stews and cassoulets. It also works beautifully with aged Manchego, Comté and other firm, nutty cheeses, as well as dishes featuring rosemary, thyme and smoked paprika. Serve at around 18°C (64°F) in a tall, generous red wine glass to allow the aromatics to open fully. In its first five years, decanting for 1–2 hours is recommended to tame the youthful concentration and let the layers of fruit and spice emerge; with additional bottle age, a shorter decant mainly to remove sediment will suffice.

Acústic Celler is the project of Albert Jané, who founded this small family winery in DO Montsant after years of experience in Catalan wine. The name “Acústic” reflects his philosophy: to make wines that are unadorned, pure and in harmony with their origin—like acoustic music, free from distortion and excessive amplification. Working primarily with old vines and traditional local varieties, and farming organically with biodynamic influences, Acústic Celler has become one of the key voices in expressing Montsant’s character as distinct from, yet complementary to, neighboring Priorat. The estate is widely respected for its commitment to low-intervention winemaking, its use of venerable vineyards and its ability to craft wines that are both honest to their terroir and refined enough for the most discerning wine lovers.
